This energetic role is perfect for a passionate culinary professional eager to lead and inspire in a fast-paced, upscale dining environment. As Banquet Sous Chef, you will partner with the Banquet Chef to oversee the preparation and presentation of banquet meals, ensuring exceptional quality and service standards are consistently met. Your leadership will drive team collaboration, uphold food safety protocols, and elevate the overall guest experience through innovative menu planning and meticulous kitchen management.
QUALIFICATIONS & SKILLS
Full-time management position that requires schedule flexibility to work both day and/or evening shifts, weekends and holidays. 3+ years of experience in high volume banquet production with working knowledge in a variety of food preparation and presentation techniques. Culinary degree preferred. Advanced culinary skills and knowledge of kitchen operations including food preparation, procurement, menu pricing, presentation, and sanitation. Ability to execute all basic cooking skills including frying, broiling, grilling, braising and preparation of soups, sauces, and stocks. Ability to create and execute basic and advanced recipes in both taste, preparation and presentation. Knowledgeable of food allergens and appropriate substitutes. A true desire to understand and anticipate the needs of others in a fast-paced environment. Detail oriented with strong leadership, communication, and organization skills. Refined verbal and written communication skills. Proficient in general computer applications including Microsoft Word and Excel.ESSENTIAL JOB FUNCTIONS
Assist the Banquet Chef in supervising all aspects of banquet food preparation, ensuring adherence to recipes, presentation standards, and dietary requirements. Lead and motivate kitchen staff, fostering a positive team environment focused on efficiency and excellence. Ensure the timely execution of a broad range of culinary dishes in accordance with recipes with respect to presentation, taste, and portion size, using a repertoire of cooking methods. Effectively utilize food product to minimize waste. Adherence to safe and sanitary food storage and cooking methods. Demonstrated compliance with food safety protocols including handling and transportation of food and use and maintenance of culinary tools and equipment. Accommodate special requests and offer flexibility in serving the individual needs of guests and colleagues to create a positive guest experience. Ensure a timely response to guest needs and resolve concerns effectively to achieve satisfaction. Perform administrative/office responsibilities as needed, including inventory, ordering, scheduling and payroll. Ensure compliance with sanitation, safety, security and emergency procedures.
