This position ensures the highest standards of food quality, consistency, and presentation while maintaining cost controls, food safety compliance, and operational efficiency. The Chef de Cuisine leads and develops the kitchen team, executes the culinary vision, and collaborates with hotel leadership to deliver an exceptional guest dining experience. This position reports to the Executive Chef.
Skills & Qualificaitons:
Full-time management position that requires schedule flexibility to work either days and/or evenings, weekends and holidays. Minimum 5 years of progressive culinary leadership experience Previous steakhouse, grill-focused, or upscale dining experience required Hotel culinary experience preferred Strong knowledge of meat fabrication, grilling techniques, and steakhouse preparations Proven leadership and team development skills Experience with food cost control, labor management, and inventory systems Working knowledge of HACCP, food safety, and sanitation standards Excellent organizational, time-management, and communication skills In-depth knowledge of large volume food preparation as well as a la carte service, food procurement, menu pricing, presentation, and sanitation. A true desire to understand and anticipate the needs of others in a large volume and fast-paced environment. Refined verbal and written communication skills.
Essential Job Functions:
Manage all day-to-day kitchen operations for the steakhouse and lounge Execute and maintain menu standards with a strong focus on premium steaks, proteins, and steakhouse cuisine Ensure consistency in food quality, taste, portioning, and presentation Lead, train, supervise, and schedule kitchen staff Monitor and control food, labor, and operational costs to meet budgetary goals Order products, manage inventory, and maintain vendor relationships Ensure compliance with all health, safety, sanitation, and food handling regulations Maintain cleanliness, organization, and proper use of kitchen equipment Collaborate with front-of-house leadership to ensure smooth service execution Support banquets, private events, and special hotel functions as needed Participate in menu development, costing, and seasonal updates Handle guest feedback professionally and take corrective action when necessary Any other duties / tasks as requested.
