Creates and recommends menu changes to achieve guest satisfaction and manages responsibilities in alignment with the Executive Chef.
QUALIFICATIONS & SKILLS
Full-time management position that requires schedule flexibility to work either days and/or evenings, weekends and holidays. 3-5 years of experience in large volume food preparation as well as a la carte service. Culinary degree and hotel background preferred. Advanced culinary skills and knowledge of kitchen operations including food preparation, procurement, menu pricing, presentation, and sanitation. Ability to execute all basic cooking skills including frying, broiling, grilling, braising and preparation of soups, sauces, and stocks. Ability to create and execute basic and advanced recipes in both taste and preparation. Strong leadership, communication, and organization skills. Candidates should be extremely detail oriented and organized. Understanding of basic financials and food costing. A true desire to exceed guest expectations in a fast-paced customer service environment. Capable of producing a consistent product in a timely manner. Proficient in general computer applications including Microsoft Word and Excel. A true desire to understand and anticipate the needs of others in a fast- paced environment. Refined verbal and written communication skills
ESSENTIAL JOB FUNCTIONS
Ensure the timely execution of a broad range of quality culinary dishes in accordance with recipes and in appropriate presentation, taste, and portion size, using a repertoire of cooking methods. Able to effectively utilize food product to minimize waste. Knowledgeable of food allergens and appropriate substitutes. Develop creative menu items while adhering to brand standards, including menus for holiday functions and special events. Successfully manage administrative responsibilities as well as employee performance management duties. Ensure team members are properly trained in food storage, handling, preparation, cooking and plating techniques and proper safety and sanitation procedures. Ensure timely response to guest need and resolve concerns beyond satisfaction. Maintain a consistent professional and positive attitude when communicating with guests and associates. Lead and coach the team towards achieving exceptional guest service and employee satisfaction. Ensure compliance with sanitation, safety, security and emergency procedures.
