Job Description
Part of the Savour Hospitality Group, we are committed to excellence in every detail from our opulent grand dining room and private Vault events to our Wine Spectator-honored wine list. We are seeking a passionate, visionary Executive Sushi Chef to lead and elevate our sushi and raw bar offerings to national acclaim.
Position SummaryAs Executive Sushi Chef, you will be the creative leader and operational driver of our sushi kitchen and raw bar program. You will craft innovative, high-end sushi and crudo offerings that align with our luxury steakhouse identity while maintaining the highest standards of quality, consistency, and guest experience in a fast-paced, high-volume fine-dining environment.
Key ResponsibilitiesLead the full sushi and raw bar team, including hiring, training, scheduling, and mentoring sushi chefs and support staff.
Design and execute a dynamic, seasonally driven sushi menu featuring premium fish, creative rolls, nigiri, sashimi, crudos, and signature items that complement our prime steaks and raw oyster program.
Maintain the highest standards of food quality, presentation, food safety (HACCP/ServSafe), and cost control.
Partner closely with the Executive Chef and culinary leadership on menu development, special events, wine dinners, and private dining experiences.
Oversee daily ordering, inventory management, and vendor relationships with top-tier seafood and sushi suppliers.
Ensure exceptional guest satisfaction through flawless execution and personalized service in the dining room.
Drive profitability while upholding Marble Room s reputation for luxury and precision.
QualificationsMinimum 5 7 years of experience as a head or executive sushi chef in a high-volume, fine-dining or luxury restaurant environment.
Strong mastery of traditional and contemporary Japanese sushi techniques, sashimi, nigiri, maki, and crudo preparations.
Proven track record of menu innovation and successful program leadership.
Thorough knowledge of seafood sourcing, sustainability, and food safety standards.
Exceptional leadership, team-building, and communication skills.
Ability to thrive in a high-pressure, high-expectation luxury setting.
ServSafe or equivalent food safety certification required.
Culinary degree or formal sushi apprenticeship preferred.
