Head Sushi Chef / Kitchen Manager Job Brief We are seeking a fast, detail-oriented, and high-energy Sushi Chef to join our conveyor belt ( Kaitenzushi ) restaurant team. In this role, you will be responsible for preparing a continuous flow of high-quality sushi, nigiri, and sashimi to keep our conveyor belt vibrant and stocked. Because our kitchen is often open to the dining area, you will be the face of the restaurant—delivering excellent culinary craftsmanship with a sense of urgency, structural cleanliness, and a welcoming attitude toward guests.
Key Responsibilities High-Volume Production:
Efficiently prepare, roll, and slice a wide variety of traditional and modern sushi (Maki, Nigiri, Gunkan, and Sashimi) to keep the conveyor belt consistently populated during peak rush hours.
Belt & Inventory Management:
Monitor the conveyor belt layout in real-time. Ensure proper product rotation, track dish timers/freshness, and quickly replenish popular items to minimize food waste while maximizing guest satisfaction.
Ingredient Prep:
Handle daily back-of-house prep, including washing and seasoning sushi rice, breakdown and precision filleting of fresh fish (tuna, salmon, etc.), and prepping vegetables.
Special Orders:
Efficiently fulfill direct-to-chef digital or verbal requests from tables for specific menu items or dietary restriction modifications.
Food Safety & Hygiene:
Adhere strictly to local health department and sanitation guidelines. Maintain a spotless workstation, regularly sanitize knives and cutting boards, and monitor correct holding temperatures for raw seafood.
Collaboration:
Coordinate seamlessly with kitchen helpers, food runners, and front-of-house staff to ensure smooth daily operations.
Requirements & Qualifications Experience:
Minimum 1-2 years of experience as a Sushi Chef or Sushi Helper in a high-volume restaurant environment (direct conveyor belt experience is highly preferred but we will train the right candidate).
Technical Skills:
Strong knife skills, mastery of traditional rolling/slicing techniques, and exact portion-control capabilities.
Speed & Stamina:
Ability to maintain speed and precision under high-pressure, fast-paced conditions. Physical capacity to stand for extended periods (8+ hours) and lift up to 40 lbs.
Schedule Flexibility:
Availability to work a flexible schedule including nights, weekends, and major holidays.
Certifications:
Valid Food Handler's Card or ServSafe certification (or willingness to obtain one before starting).
