Middle Eastern & Turkish Pastry Specialist Location:

Full-Time About Malooga Malooga is a Yemeni and Middle Eastern restaurant focused on authentic flavors, hospitality, and high-quality food experiences. We are looking for a highly skilled Master Baker specializing in Turkish and Middle Eastern desserts to lead and elevate our pastry and sweets program. Position Summary The Master Baker will be responsible for preparing, developing, and maintaining a premium selection of Middle Eastern and Turkish pastries and desserts. This role requires strong hands-on baking experience, creativity, consistency, and deep knowledge of traditional sweets preparation techniques. The ideal candidate has experience working with desserts such as:- Baklava
- Kunafa/Knafeh
- Basbousa
- Balah El Sham
- Turkish cakes and pastries
- Maamoul
- Warbat
- Qatayef
- Honey-based and pistachio desserts
- Dough and syrup-based Middle Eastern pastries Key Responsibilities
- Prepare and bake high-quality Middle Eastern and Turkish desserts daily
- Develop and standardize recipes to ensure consistency and quality
- Create visually appealing dessert presentations for dine-in and catering
- Manage dessert production schedules and inventory levels
- Train and supervise pastry staff and assistants
- Maintain cleanliness, organization, and food safety standards in the pastry kitchen
- Monitor ingredient freshness and quality control
- Assist in seasonal dessert creation and menu development
- Control waste and maintain efficient production practices
- Ensure all desserts meet Malooga's quality and presentation standards Qualifications
- Minimum 3-5 years of experience in Middle Eastern, Turkish, or Mediterranean pastry production
- Strong knowledge of traditional sweets techniques and ingredients
- Experience working in restaurants, bakeries, hotels, or dessert shops
- Ability to produce desserts in high volume while maintaining quality
- Skilled in dough preparation, syrup balancing, baking temperatures, and dessert finishing
- Strong organizational and time-management skills
- Ability to work early mornings, weekends, and holidays when needed
- Leadership experience is preferred
- Passion for authentic Middle Eastern desserts and hospitality Preferred Skills
- Experience creating modern presentations while preserving authentic flavors
- Knowledge of wholesale dessert production
- Familiarity with inventory and kitchen cost control
- Ability to introduce new dessert concepts and seasonal specials
