Job Description

Job Overview We're looking for a Chef De Cuisine to help lead the kitchen at Locals Raw Bar, a Japanese-Lowcountry concept rooted in hyper-seasonal ingredients, from-scratch production, and a deep respect for the South Carolina coast. This isn't a corporate kitchen. We source directly from local farmers, fisherman, and our own waters. We cure, ferment, and butcher in-house. We chase Michelin-level execution with the soul of the Lowcountry behind it.
  • The Role
  • You'll work directly alongside ownership to shape daily menus that reflect what's at peak
  • whether that's soft shell crabs, wild-harvested oysters, ramps, or fresh-off-the-boat local fish. Contemporary technique meets coastal tradition here, and we want someone who understands both.
  • Collaborate on daily menu development using seasonal, locally sourced ingredients
  • Lead and develop a tight knit kitchen team
  • Maintain the highest standards of execution, consistency, and cleanliness
  • Contribute to house charcuterie, fermentation, and preservation programs
  • Help drive the culinary identity of a concept with serious long-term vision
  • What we're looking for
  • Proven experience in a high-caliber kitchen
  • fine dining or serious independent restaurant background preferred
  • Strong foundation in classical technique with curiosity for contemporary and Japanese-influenced cuisine
  • A genuine passion for seasonal, ingredient-driven cooking
  • Someone who leads by example, stays calm under pressure, and takes ownership
  • Familiarity with the Southeast food landscape is a plus

  • Compensation & Details
  • $50,000
  • $60,000 annually, based on experience
  • 50/60 hours per week
