The position requires an understanding of catering business possess the ability to effectively communicate with colleagues and clients. Additionally, this person must exercise considerable initiative, independent judgment, flexibility, and discretion in the performance of assigned duties. This is a full-time hourly position (non-exempt), with some benefits. The Event Chef is responsible for effectively and efficiently managing a team of Chefs to execute the back of the house service duties on on-site.
Duties include:
In advance:
- Review Banquet Event Orders (BEOs) to familiarize yourself with details to include but not limited to: timing, dietary restrictions, service notes, allergies, etc.
- Communicate with Sous Chefs to plan for successful events.
- Review event details with sales manager if needed.
Onsite:
- Set up, build, and organize event kitchens to ensure efficient service.
- Assign duties to event kitchen staff on-site in preparation for service.
- Oversee all finishing of menu items on-site.
- Review menu and communicate with Event Captain to ensure there have been no last-minute adjustments. If changes are needed, adjust accordingly.
- Conduct shift meetings and ensure all employees are familiar with service details.
- Assess and manage BOH staffing needs throughout shift for labor expense control.
- Maintain open communication with Event Captain during event.
- Perform all closing duties from an event that may be required before departing.
The Prep Chef will follow recipes and procedures for weekly preparation leading to event service.
Duties include:
- Review and execute preparation for assigned preparation lists on given day.
- Attend daily meetings to review preparation schedule and be assigned tasks for completion.
- Communicate with Sous Chefs regarding preparation details.
- Maintain high standards of safety and cleanliness.
- Assist with cleaning and sanitation procedures as required.

POSITION REQUIREMENTS
- High school diploma or equivalent (preferred)
- Experience in catering (preferred)
- Minimum of 2 years' experience in food and beverage (preferred)
- Must be able to maintain a stationary position for long periods of time
- Frequently move equipment onsite up to 50 pounds
- Occasionally must work in outdoor weather conditions
- Reliable source of transportation is a must due to events being throughout the Charleston area
- Willingness to work long hours, weekends, and holidays (when needed)
