About Big Fish Big Fish is a new 500 seat, seafood and American spot opening at Broadway at the Beach. Casual room, live music, sports on the walls — and food that doesn't apologize for being in a sports-and-entertainment venue. We're food-first. That's the whole bet. We haven't opened yet. You'd build the kitchen, the menu, and the crew from scratch. The job You run the kitchen. The menu is yours. The team is yours. The standards are yours. Ownership handles the room, the bar, and the bigger picture, and lets you cook. Day to day Build the menu — seafood-forward, broadly appealing, holds up on a Friday night in July Source the product — local fishmongers, regional purveyors, real produce. Not one giant distributor order and call it a day. Set your recipes, plating, and the quality bar — and make sure they hold every shift Hire and train the kitchen crew — sous, line, prep, dish Help spec the kitchen layout and equipment during build-out Run food cost, inventory, ordering, waste, labor Stay on top of health code, food safety, allergens Work the line — expo, prep planning, the daily grind Refresh the menu with the seasons and the Myrtle Beach calendar You 3+ years as Exec Chef, CDC, or a strong Sous ready to step up — in a high-volume, full-service kitchen You know seafood. Sourcing, breakdown, technique, respect for the product. You can put a menu together that's both great and makes money You've run a kitchen that did $4M+ in food You can build a crew and keep them You think in food cost, labor cost, waste, and yield Calm and organized on a busy line Pre-opening experience is a big plus ServSafe Manager cert required Nights, weekends, and the Myrtle Beach summer don't faze you What's in it for you Your menu, your team, your kitchen Ownership that takes food seriously and will spend to do it right Real say in the equipment during build-out — you're not inheriting somebody else's bad calls $85K-$110K base plus bonus Paid time off, food on shift We're not looking for a one-year hire.
