Duties Lead the food production process for airline catering, ensuring all meals are prepared according to menu specifications and safety standards. Oversee kitchen operations, including supervising staff, managing shift schedules, and maintaining a productive work environment. Plan menus that cater to diverse dietary requirements and preferences, including special diets such as vegetarian, gluten-free, or allergen-free options. Manage inventory control and food safety protocols to ensure proper stock levels and compliance with health regulations. Support banquet and special event catering efforts, ensuring timely delivery and presentation of meals onboard flights or at catering facilities. Skills Extensive culinary experience with a strong background in food production and kitchen management within the food industry or hospitality sector. Proven supervising experience with team management skills that motivate staff and foster collaboration. Knowledge of dietary department practices, including menu planning for special diets and allergy considerations. Experience in fine dining or restaurant management is highly desirable for maintaining high standards of presentation and quality. Strong understanding of inventory management, food safety regulations, and food handling procedures. Excellent communication skills to coordinate with team members, suppliers, and airline personnel efficiently.
