Position Overview The Chef de Partie is responsible for overseeing the daily operation of an assigned kitchen station while ensuring exceptional food quality, consistency, and execution. This role serves as a working supervisor who leads by example, supports the development of culinary team members, and helps maintain Hotel ZaZa's high standards for food preparation, cleanliness, and guest satisfaction. The ideal candidate is passionate about culinary excellence, thrives in a fast-paced environment, and demonstrates strong leadership, organization, and attention to detail. The Chef de Partie plays a key role in ensuring smooth kitchen operations and delivering memorable dining experiences for every guest. Key Responsibilities Oversee the daily operation of an assigned kitchen station, ensuring all food is prepared and presented according to Hotel ZaZa standards. Lead and support Cook I, Cook II, and Cook III team members through training, coaching, and daily supervision. Monitor food quality, consistency, portion control, and presentation throughout service. Ensure recipes, preparation methods, and plating standards are executed accurately. Maintain compliance with all food safety, sanitation, health department, and workplace safety standards. Assist with inventory management, product rotation, and minimizing waste through proper storage and utilization practices. Support ordering, receiving, and stocking of products within assigned areas. Ensure all equipment, workstations, and kitchen areas remain clean, organized, and properly maintained. Communicate effectively with culinary leadership regarding operational needs, staffing concerns, and product availability. Assist with banquet, catering, VIP, and special event production as needed. Contribute to achieving departmental goals related to guest satisfaction, operational excellence, and financial performance. Minimum 2-4 years of professional culinary experience, preferably in an upscale restaurant, luxury hotel, or high-volume culinary environment. Previous experience leading a station, mentoring team members, or serving in a supervisory culinary role preferred. Strong knowledge of culinary techniques, food preparation methods, and kitchen operations. Working knowledge of food safety, sanitation practices, and HACCP principles. Demonstrated ability to lead by example and maintain a positive, team-oriented work environment. Strong organizational skills and attention to detail. ServSafe Certification or ability to obtain certification upon hire. Flexible schedule, including mornings, evenings, weekends, and holidays as business demands require. Culinary degree preferred, or equivalent combination of education and professional culinary experience. Physical Requirements Frequent standing and walking for extended periods throughout the shift. Ability to lift, carry, and move products and equipment weighing up to 50 pounds. Frequent bending, reaching, kneeling, crouching, and repetitive hand movements. Ability to safely operate commercial kitchen equipment, including knives and cooking equipment. Ability to work in environments with significant temperature variations, including hot kitchen conditions and refrigerated storage areas. Ability to maintain a consistent physical pace during high-volume service periods.
