Job Description

Nancy's hustle is seeking a qualified AM sous chef to lead our prep team.

Team Oversight and Production
  • Supervise the AM prep team, managing large-scale production projects and ensuring service readiness.
  • Oversee all AM production, including scratch pasta, dumplings, and sauces.
  • Manage AM prep lists to ensure all tasks are completed and the kitchen is reset for the PM staff.
Quality Control
  • Maintain rigorous quality control through constant tasting, watching, and listening during food preparation.
  • Ensure a comprehensive knowledge of all dishes, including preparation methods, ingredients, sourcing, and allergens.
  • Communicate any quality or timing issues, as well as necessary recipe adjustments, directly to the CDC.Kitchen Operations and Maintenance
  • Maintain restaurant organizational systems and oversee the cleanliness of the entire BOH.
  • Ensure the kitchen, dish area, and walk-in are properly cleaned, organized, and maintained at the end of each shift.
  • Manage a regular deep-cleaning schedule for the AM line crew.
  • Collaborate with chefs on station setup and flow, particularly when introducing new dishes.
  • Communicate ordering needs and equipment repair requirements to the CDC.Leadership and Professionalism
  • Participate in manager meetings to discuss operations and contribute ideas for continuous improvement.
  • Foster a positive, safe, and respectful work environment.
  • Actively participate in conflict resolution and report personnel issues to the management team.
  • Demonstrate a commitment to growth by showing interest in new products and techniques.
