The right applicant will have ample sushi experience and be a strong hand when it comes to all aspects of Japanese food. Superior knife skills, and food handling, with processes such as breaking down whole fish, and Japanese vegetable production experience must be demonstrated Demonstrating speed and precision with these tasks, as well as making sushi is important for our busy establishment. Applicant must also be elite with communication skills, having the ability to communicate clear expectation while leading our team is crucial for the is position. Key Goals of Position:
Serve safe food. This is your primary goal. Exceed Guest expectations. Ensure the best food quality possible. Control food, labor and equipment costs. Staff and train the best kitchen talent possible Maintain a positive work environment and professional atmosphere. Find and create improvements in the cost and quality of the products, ingredients and processes used. Own your kitchen. Keep it buffed, clean and in good working order. Adhere to and enforce all company policies.
Necessary Capabilities:
Strong leadership skills. Strong culinary background in Japanese/Asian ingredients and fish fabrication techniques Knowledge of sushi preparation, proper fish handling Strong work ethic. Interpersonal skills. Lift up to 50 lbs. Stand, walk, lift, carry on a daily basis. Physically able to work for up to 14 hours/day. Basic administrative skills;
Email, Word, Excel, Key Duties:
Sanitation and food safety. Exceed guest expectations. Maintain food quality. Lead team effectively, maintaining a positive work environment. Control Costs. Maintain kitchen equipment and cleanliness standards.
