The ideal candidate has strong knife skills, understands food safety, and can prepare high-quality sushi while maintaining consistency, cleanliness, and efficiency in a fast-paced restaurant environment. Prepare sushi items including nigiri, sashimi, rolls, and specialty items Ensure freshness and proper handling of all seafood and ingredients Maintain clean and organized sushi station at all times Follow all health and safety regulations (WA State Food Code) Manage prep work (rice cooking, fish cutting, sauces, garnishes) Monitor inventory and communicate shortages to management Work closely with kitchen and service staff for smooth operation Maintain consistency in presentation and portion control Assist in developing new menu items (optional but preferred)
