Job Description

Essential Duties/Responsibilities:
  • Prepare food of consistent quality following recipe cards and production and portion standards in accordance to the guest's needs as identified on the ticket from the server.
  • Advance prep work prior is required prior to going on the line and making sure not to prepare more than estimated needs.
  • Date all food containers and rotate as per the SOP, making sure that all perishables are kept at proper temperatures.
  • Check pars for shift use, determine necessary preparation, freezer pull and line set-up.
  • Note any out-of-stock items for possible shortages.
  • Assist in other prep work as needed.
  • Return all food items not used on next shift to designated storage areas, being sure to cover/date all perishables.
  • Assist in setting up plans and actions to correct any food cost problems, control waste, loss and usage per SOP.
  • Adhere to the equipment maintenance and kitchen "clean as you go" policy.
  • Assumes 100% responsibility for quality of products served.
  • Knows and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures.
  • Stocks and maintains sufficient levels of food products at line stations to ensure a smooth service.
  • Maintains a clean and sanitary work station including tables, shelves, grills, broilers, fryers, pasta cookers, sauté burners, convection oven, rotisserie, flat top range and refrigeration equipment.
  • Prepares items for broiling, grilling, frying, sautéing, or other cooking methods by portioning, battering, breading, seasoning and/or marinating.
  • Arrange sauces and supplementary garnishes for allocated station.
  • Open and close the kitchen correctly and following the opening or closing checklist for kitchen stations.
  • Constantly uses safe and hygienic food handling practices.
  • Performs related duties such as helping to wash dishes as needed, preparing recycling and cleaning.
  • Handles, stores and rotates all products properly.
  • Completes required tasks within assigned time frame.
