A Cook plans, prepares, and cooks food items to ensure the highest quality service and experience for customers. They help keep the kitchen organized and running efficiently. They ensure proper food handling, sanitation and following food storage procedures. A Line Cook prepares food and makes sure Servers deliver each dish to customers in a timely manner. A Line Cook is responsible for that station's workflow and getting meals out on time. They oversee the cooking process from start to finish and determine how much time each step requires.
DUTIES/RESPONSIBILITIES
Pleases customers by providing a pleasant dining experience. Serves meals by reviewing recipes; assembling, combining, and cooking ingredients; and maintaining a sanitary kitchen. Executes cold food production in accordance with standards of plating guide specifications. Attends to the detail and presentation of each order. Places and expedites orders. Prepares ingredients by following recipes; slicing, cutting, chopping, mincing, stirring, whipping, and mixing ingredients; adding seasonings; verifying taste; and plating meals. Completes hot meal preparation by grilling, sautéing, roasting, frying, and broiling ingredients and assembling and refrigerating cold ingredients. Adheres to proper food handling, sanitation, and safety procedures; maintains temperature and Hazard Analysis Critical Control Point (HACCP) logs as required; and maintains appropriate dating, labeling, and rotation of all food items. Stores leftovers according to established standards. Coordinates daily food supply inventory. Submits order to supervisor. Assists with receipt of deliveries. Receives, checks, and stores food service deliveries. Contributes to daily, events, and theme menus in collaboration with supervisor. Ensures smooth operation of kitchen services during absence of supervisor. Maintains cleanliness and sanitation of equipment, food storage, and work areas. Completes cleaning according to daily and weekly schedules and dishwashing/pot washing as needed. Assists with orienting new employees to their work area. Listens to customer complaints and suggestions and resolves complaints. Implements suggestions within parameter of position and refers more complex concerns to supervisor. Instructs personnel in use of new equipment and cleaning methods and provides efficient and effective methods of maintaining work area. Participates in and/or contributes to programs, committees, or projects designed to improve quality of service and employee productivity. Adjusts thermostatic controls to regulate the temperature of ovens, broils, grills, roasters, and steam kettles. Observes and tests the integrity of food being cooked by tasting, smelling, and checking that it is properly cooked. Portions food on serving plates, bowls, and platters, adds gravies and sauces, and garnishes servings. Communications to be accurate and timely, through written or verbal means. Observe all Department rules, regulations, and dress code. Maintains cleanliness and sanitation of dishes, equipment, food contact surfaces, and kitchen area. Operates dishwasher and hand washes, pots, and pans, as necessary. Report any issues to the Manager as soon as possible. Including any employee issues that may happen. Proper storage of perishable product. Responsible for controlling food and supply waste. Equipment Knowledge- Maintain the care and cleanliness of all mechanical equipment. Provide a safe work environment through proper use of the equipment and personal tools. Monitor equipment daily and report problems to the Manager. Prepare all food items as directed in a sanitary and timely manner Follow recipes and presentation specifications Operate standard kitchen equipment safety and efficiently Clean and maintain station in practicing good safety and sanitation Assist with the cleaning and organization of kitchen and equipment Restock items as needed throughout the shift Adhere to all sanitation and food production codes
QUALIFICATIONS/SKILLS
Ability to maintain a professional and courteous demeanor during stressful and/ or busy times. Ability to prepare food for consumption with background knowledge of proper techniques and equipment to be used. Knowledge of industry standards on food storage and handling techniques is highly desirable. Sound knowledge of cooking methods and techniques. Sound knowledge of food health and safety regulations. The ability to follow recipes. Leadership skills able to direct, coach and supervise a team. The ability to work as part of a team. The ability to stand for extended periods. The ability to work in a fast-paced environment. Ability to work under pressure Excellent communication and leadership skills. Exceptional organizational, time management, and problem-solving skills. Must be able to work different shifts Must be able to work overtime as required.
EDUCATION, EXPERIENCE & LICENSING
High school diploma or GED. CA Food Handlers Certified Minimum of 1-2 years' experience in cooking strongly preferred. Minimum of 1-2 years of related experience, in restaurant. Preferred high-volume and fast pace restaurant experience Demonstrates knowledge of food preparation and presentation
