Utility Prep Cook Destination Smokehouse Murrieta, CA Job Details Full-time $17 - $19 an hour 11 hours ago Benefits Employee discount Qualifications Food Handler Certification Full Job Description Job Description Summary Under the direction of the Kitchen Manager, the Utility Prep Cook is a cross‑functional back‑of‑house team member responsible for supporting both stewarding and food preparation operations. This role ensures a steady flow of clean dishware, maintains sanitation standards, and performs essential prep tasks to keep the kitchen running efficiently. The Utility Prep Cook contributes to ingredient preparation, workstation organization, and cleanliness while upholding Destination Smokehouse's standards of craft, respect, and operational excellence. This position is ideal for individuals who thrive in a fast‑paced environment, enjoy hands‑on kitchen work, and want to grow their culinary skills while supporting the backbone of daily operations. Essential Duties & Responsibilities Dishwashing, Stewarding & Sanitation 1. Dish Operations & Cleaning Wash and sanitize all China, glassware, flatware, pots, pans, and small wares using commercial dish machines and 3‑compartment sinks. Inspect dishware for cleanliness and polish silverware as needed. Perform routine cleaning of dish machines, including draining, screen cleaning, and tank flushing. Maintain sanitation log, cooling logs, and chemical usage records. 2. Kitchen & Equipment Cleaning Clean and disinfect kitchen equipment, stainless‑steel surfaces, refrigerators, and prep areas. Sweep, mop, and maintain floors, walls, vents, and drains. Empty and sanitize trash, compost, and recycling bins using approved methods. Maintain cleanliness of receiving areas, walk‑ins, and dry storage zones as needed. Food Preparation & Kitchen Support 3 . Ingredient Prep & Station Readiness Gather required paperwork, review order tickets, and ensure all necessary ingredients are prepped and ready for use. Perform basic prep tasks including chopping, portioning, seasoning, marinating, and assembling ingredients. Support larger prep projects such as pre‑prepping sides, portioning meats, and organizing next‑day production. Ensure proper labeling, dating, and storage of all prepped items following FIFO rotation. 4. Supporting Production & Line Readiness Restock stations with clean dishware, utensils, and prep items. Assist cooks by providing prepped ingredients, sauces, and sides during service. Maintain workstation cleanliness and readiness throughout the shift. Communicate shortages, discrepancies, or quality concerns to the Kitchen Manager. Cross‑Training, Collaboration & Team Support 5. Cross‑Functional Kitchen Support Train and assist in all areas of the kitchen including prep, dish, stock, and basic cooking tasks. Support special projects such as BBQ assistance, banquets, events, and catering prep. Assist with stock rotation, receiving deliveries, and organizing storage areas. 6. Team Collaboration & Communication Proactively assist team members without being asked. Communicate respectfully with cooks, leads, and FOH staff. Participate in shift huddles and follow up on assigned tasks. Uphold Destination Smokehouse's values of craft, respect, and ownership. Education/Experience/Qualifications High School Diploma or GED preferred. Prior experience in dishwashing, stewarding, or prep cooking preferred. Basic knowledge of food preparation, kitchen equipment, and safety regulations. Ability to work efficiently in a fast‑paced environment. Strong attention to detail and ability to follow instructions. Team‑oriented mindset with good communication skills. Able to follow procedures, take direction, and read recipes or production lists. Must be 18+ Certificates/Licenses/Registrations  Must obtain and maintain a Food Handler's certification prior to start date.  Additional compliance training may be required based on venue or role. •Note This description incorporates the most typical duties performed. Physical Demands  Frequent lifting and carrying up to 50 lbs.  Standing for extended periods during shifts.  Bending, stooping, and repetitive motions required.  Exposure to hot kitchens, cold storage, and varying temperatures.  Use of hands and arms to handle tools, equipment, and dishware.  Occasional climbing of ladders or step stools.  Pushing and pulling carts, bins, and equipment as needed.
Pay:
$17.00 - $19.00 per hour
