About Us Red Maple Hospitality is a growing culinary and events company with operations in Aspen, Vail, and Dallas. We're looking for a station-ready Cook 2 to join our kitchen team at a luxury boutique hotel in downtown Aspen — working across a full-service hotel café, a high-end catering and banquets program, and an exclusive private chef dinner series. The Role This is not a learning position — the Cook 2 arrives with solid foundational technique and the ability to own a station without supervision. You'll work directly alongside the Cook 1 and Head Chef, executing across café breakfast and lunch, high-volume catering events (up to 150+ guests), and bespoke private dinners in Aspen's finest residences. If you're reliable, skilled, and hungry to grow, this role is a direct pathway to Cook 1 advancement. What You'll Do Own your station: mise en place complete, organized, and ready before every service Execute all café breakfast and lunch menu items to established quality, presentation, and portioning standards Execute prep assignments from BEO production plans accurately and on deadline for catering events Plate simultaneously with the brigade during banquet service — every guest's plate goes out together Support private chef dinners in luxury Aspen residences as assigned: prep, cook, and leave the kitchen in better condition than you found it Communicate proactively with the Cook 1 on station status, pacing, par shortfalls, and any quality concerns Assist and informally guide Cook 3 and prep cook team members during service and prep Receive and rotate deliveries using FIFO standards; log all food waste events Maintain food safety standards independently on every shift: verify temperatures, enforce sanitation, clean as you go What We're Looking For 1-2 years of professional kitchen experience with demonstrated ability to own and run a station independently Solid foundational knife skills and cooking technique across multiple methods (sauté, roast, grill, braise) Experience working in both prep and live service environments Ability to read and execute standardized recipes accurately Valid Food Handler's certification (or within 30 days of hire) Reliable, punctual, and professional under pressure Preferred (Not Required) Experience in hotel, resort, or catering kitchen environments Experience in both café/all-day dining and catering or banquet production Culinary school training or equivalent structured professional development Familiarity with BEO-driven event production Spanish language proficiency Seasonal Schedule This is a seasonal position with two seasons: Summer (June-October) and Winter (December-March). Schedule is variable and includes evenings, weekends, and holidays. Peak weeks may require extended hours. Expect up to 10 hours on your feet, lifting up to 50 lbs, and working across hot lines and cold storage at 7,908 feet elevation.
