The Role:
You are the culinary engine of TAVA House, transforming raw ingredients into the award-winning dishes that define our concepts. Working closely with Executive Chef Victor Matthews and the entire management team, you thrive in a multi-kitchen environment where versatility is your greatest asset. You might start your shift perfectly executing prime cuts for a high-end dinner at Firebrand, transition to pushing out high-volume, elevated pub fare for the TAVA Taproom, and finish by assisting with prep for a 200-person gala in the River Room. Because we operate as one cohesive unit, you leave your ego at the door. You jump onto whatever station needs help, communicate seamlessly with the front of house, and never hesitate to jump into the dish pit to support our stewards when the rush hits. You maintain uncompromising standards for quality, cleanliness, and execution, ensuring the entire house operates at an elite level. Compensation & Our "One Team"
Philosophy:
Base Wage:
$16.00 - $22.00/hr Anticipated total compensation: $25.00 - $35.00+/hour.
Note:
We do not take a tip credit. We operate on a strict "One House, One Team" philosophy. Tips are pooled and shared across the entire department—meaning you share directly in the financial success of the front of house. We believe that a flawless guest experience is forged by the front and back of house working in total lockstep, and our compensation model reflects that. When the house wins, everybody wins.
What You Bring:
2+ years of line cook experience in high-volume, from-scratch kitchens (fine dining and grill/saute experience are massive pluses). Exceptional culinary fundamentals—strong knife skills, precise temperature control, and an understanding of advanced cooking techniques. The agility and willingness to wear "many hats," shifting seamlessly across all three concepts: Firebrand, TAVA Taproom, and the River Room. A collaborative, ego-free mindset with a deep commitment to supporting your fellow cooks, the front of house, and the management team. An absolute respect for the dishwashers and stewards—our MVPs—and an eagerness to step in and help them keep the kitchen running smoothly during peak hours. Absolute buy-in to our shared-tip, one-team culture. You recognize that a perfectly timed ticket and a clean plate are just as vital to the tip pool as the server delivering the food. An ability to hold yourself to elite food safety, sanitation, and operational standards.
Physical Demands & Working Conditions:
Stamina:
Must be able to stand, walk, and remain active in a hot, fast-paced kitchen environment for extended shifts.
Strength & Handling:
Ability to safely lift 50+ lbs repeatedly. Must be able to move and maneuver heavy prep containers, bulk ingredients, full cambros, and hot boxes.
Agility & Pace:
Must possess the physical coordination to pivot quickly on a crowded line, safely handling hot pans, sharp knives, and open flames while maintaining a high-volume pace.
