- Full-time Position Title Sauté Line Cook Department Culinary / Kitchen Operations Reports To Executive Chef, Sous Chef, Banquet Sous Chef Position Summary The Sarasota Field Club is Looking for a Sauté Line Cook.
This Individual is responsible for the preparation, cooking, plating, and presentation of all menu items assigned to the sauté station while maintaining the highest standards of quality, consistency, cleanliness, and food safety. This position requires strong culinary skills, the ability to multitask under pressure, excellent communication, and a commitment to teamwork. A successful sauté cook must possess a thorough understanding of cooking techniques, timing, sauces, proteins, starches, vegetables, and proper station organization & The Passion to ensure that every dish leaving the kitchen meets the establishment's standards! Food Preparation
- Prepare all mise en place required for daily service.
- Produce stocks, sauces, reductions, compound butters, and garnishes according to standardized recipes.
- Portion proteins and prepare vegetables and starches.
- Prepare daily specials as directed.
- Rotate products using FIFO.
- Label and date all products.
- Maintain adequate pars throughout service. Cooking Responsibilities
- Execute proper sauté techniques including pan sautéing, roasting, deglazing, reductions, butter basting, and sauce work.
- Prepare pasta, seafood, poultry, pork, vegetables, grains, and accompaniments.
- Maintain proper cooking temperatures and seasoning.

- Read and organize tickets efficiently.
- Coordinate with all stations.
- Maintain ticket times without sacrificing quality.

- Follow recipe specifications and portion standards.

- 2+ years line cooking experience preferred.
- Fine dining, hotel, or country club experience preferred.
