We are seeking a dedicated and skilled Line Cook/Prep Cook to join our sushi kitchen team. The ideal candidate is passionate about Japanese cuisine—particularly sushi and hand rolls—and thrives in a fast-paced, high-quality culinary environment. This role plays a crucial part in ensuring smooth kitchen operations and delivering a memorable dining experience to our guests. Responsibilities Prepare and assemble sushi and hand rolls according to recipes, with attention to consistency, quality, and presentation. Assist in daily prep, including cutting fish, slicing vegetables, preparing sauces, and cooking sushi rice. Maintain a clean and organized workstation, following food safety and sanitation standards. Operate sushi knives and kitchen equipment with precision and care. Work alongside sushi chefs and kitchen team to ensure smooth service during busy hours. Monitor inventory levels for fish, rice, and other essential ingredients; assist in stock rotation and ordering. Support any special events or catering orders, ensuring quality control across all dishes. Help train junior kitchen staff in sushi prep, knife handling, and food safety best practices. Skills & Qualifications Previous experience in sushi preparation or working in a Japanese kitchen is highly preferred. Solid understanding of food safety, especially in raw seafood handling. Strong knife skills, with the ability to handle fish and vegetables with accuracy and care. Ability to work efficiently in a fast-paced, high-volume environment while maintaining high quality. Collaborative team player with a strong work ethic and a commitment to consistency. Experience with hand rolls, nigiri, or maki is a plus. Attention to detail, cleanliness, and pride in craftsmanship are a must.
