POSITION OVERVIEW
We are seeking a skilled and detail-oriented sushi cook to support exceptional dining experiences in a fast-paced luxury environment. This role requires strong technical ability, precision, organization, and a genuine passion for culinary excellence. Sushi cooks play a vital role in delivering high-quality MediterrAsian cuisine by preparing sushi dishes with consistency, creativity, and adherence to the highest food safety and presentation standards.

YOUR ROLE
Prepare all types of sushi, including maki, nigiri, and sashimi with precision and consistency Prepare sushi rice and ensure proper seasoning, texture, and presentation standards are met Chop, slice, and fillet various types of fish while maintaining the highest quality standards Customize orders to accommodate guest preferences and food allergy considerations Maintain complete knowledge of and comply with all departmental policies, service procedures, and standards Maintain proper use, care, and cleanliness of kitchen equipment and tools Anticipate guests needs, respond promptly, and support a seamless dining experience Maintain positive co-worker and guest relations while working collaboratively as part of a team Ensure compliance with all state sanitation, health regulations, and company standards Follow prep lists and instructions provided by managers and supervisors Perform job functions with attention to detail, speed, and accuracy in a high-volume environment Work effectively under variable conditions, including heat and cold, while maintaining composure Prioritize tasks, stay organized, and demonstrate strong problem-solving skills under pressure Maintain confidentiality of company information, recipes, and preparation techniques Maintain reliable attendance, punctuality, and a performance-driven mindset Ability to stand for extended periods and work in a fast-paced kitchen environment This is not an exhausted list of job responsibilities.
REQUIREMENTS
Minimum 3 years of experience as a sushi cook or in an Asian restaurant within a high-volume environment Strong knowledge of sushi types, knife skills, and sushi-rolling techniques Ability to follow recipes, perform basic arithmetic, and communicate clearly and effectively Understanding of safety, sanitation, and proper food handling procedures Food Handler s Permit required Flexible availability, including evenings, weekends, and holidays Must be able to work nights, weekends, and some holidays Must be able to speak, read, and understand basic cooking directions
