Job Description

Job Title:
Pizzaiolo / Pizza Maker Position Summary The Pizzaiolo focuses entirely on the art of crafting authentic pizzas. This role is dedicated strictly to dough handling, ingredient preparation, and oven operations. You will spend your shifts hand-stretching dough, assembling fresh toppings, and baking pizzas to perfection.
Dough Handling & Preparation Dough Portioning :
Roll, weigh, and ball pre-made dough batches into precise portions for proofing. Mise en

Slice, grate, and prep pizza toppings, cheeses, and sauces for the pizza station.
Station Setup :
Organize the pizza line with fresh ingredients before each service rush begins.
Assembly & Baking Hand-Stretching :
Stretch pizza dough by hand to a uniform thickness, avoiding rollers or presses to protect the crust texture.
Topping Assembly :
Spread sauces and distribute premium ingredients evenly according to recipe specifications.
Oven Monitoring :
Launch pizzas into the oven and use a turning peel to rotate them for an even bake and perfect crust char.
Station Cleanup Oven Maintenance :
Clear ash, soot, or cornmeal debris from the oven floor throughout and at the end of the shift.
Sanitation :
Clean and sanitize pizza cutters, peels, prep tables, and refrigerated ingredient bins daily.
Skills & Requirements Dough Experience :
Proven experience stretching pizza dough by hand in a commercial kitchen setting.
Oven Comfort :
Ability to safely operate and work in front of high-heat pizza ovens (wood, gas, or stone deck).
Speed & Accuracy :
Capability to build and bake multiple pizzas quickly and accurately during high-volume rush hours.
Physical Stamina :
Capability to stand for long periods and safely lift ingredient crates or heavy flour bags.
Food Safety :
Valid local food handler card or certificate.
