Job Description

Copper Canyon is currently seeking enthusiastic candidates to join our BOH Team! We are looking for optimistic, high-energy, professional individuals who can accurately and efficiently cook meats, fish, vegetables, soups and other hot food products as well as prepare and portion food products prior to cooking.

Responsibilities of our
Cooks:
Reports to work on time and is on the prep station as indicated on the weekly work schedule. Uniform meets restaurant requirements of cleanliness and appearance. Practices positive personal hygiene and cleanliness habits during all work shifts. Sets-up station to include food items, preparation equipment, small wares, food ingredients, and supply items needed for effective operation of the station. Follows the prep list for station set-up and recipe production. Reports any problems or discrepancies to Sous Chef/Chef on a timely basis. Assists other kitchen personnel in food preparation and side works as assigned by the Sous Chef/Chef. Preps all food products according to the standards and procedures stated on the BRRG recipe books. Preps and cooks all food to ensure that all items are prepared according to company specifications, recipes, procedures and quality standards. Ensures our guests have a superior dining experience by correctly preparing all food products. Checks, prior to the start of the shift, the par and stock levels of all salad ingredients, cold/hot appetizers, entree prep, dessert items, condiments, garnishes, equipment, and small wares to ensure sufficient quantity for the demands of the business. Maintains sufficient back-up par levels. Communicates any discrepancies to the Sous Chef/Chef. Correctly prepares vegetables for salads, appetizers, entrees and desserts and ensures that all food is prepared to BRRG standards of quality. Maintains the highest degree of sanitation, cleanliness and food safety for work area to include counter tops, refrigeration units, floors, walls and shelving. Accomplishes alt job duties while adhering to all safety guidelines and practices throughout the shift. Immediately reports any unsafe condition or unsafe act, accidents and/or injuries to Sous Chef/Chef. Correctly completes all station closing duties at the end of each shift. Assists Sous Chef/Chef and other kitchen members in accomplishing closing duties and kitchen cleanliness. Must be able to bend, kneel, stoop, reach and squat on a frequent basis to receive, store and stock supplies and equipment as well as to work the line during service periods. Must be able to communicate effectively and listen attentively to supervisors, other employees, vendors, suppliers and other business representatives. Must be able to taste
  • to be able to distinguish between and among flavors, spices, temperatures, mouth feel and smell
  • to distinguish between and among odors and scents as to their appeal and level of intensity for all food products.
Must be able to work in an environment subject to extreme cold (30 degrees), heat (above 100 degrees), loud noises from restaurant equipment and machinery, fumes, odors, dust and smoke.
Qualifications:
A minimum of 2 years of experience in kitchen preparation and cooking At least 6 months experience in a similar capacity Must be able to communicate clearly and effectively Be able to reach, bend, stoop and frequently lift up to 40 pounds Be able to work in a standing position for long periods of time Must have exceptional hygiene and grooming habits Blueridge Restaurant Group is an equal opportunity employer.
