Hourly, full-time If you take pride in clean technique, fast tickets, and a line that runs like clockwork, OMB wants you leading it. We're looking for a Lead Line Cook to run our line operation in Ballantyne — a key member of the Culinary Management Team who sets the pace, holds the standard, and brings the rest of the crew up with them. You'll cook great food for a packed house, mentor the cooks around you, and get real room to grow. About OMB Founded in 2009 in Charlotte's Lower South End, The Olde Mecklenburg Brewery has always brewed to the German Purity Law — Reinheitsgebot — using just four ingredients: water, barley, hops, and yeast. That commitment to quality runs through everything we do, including the kitchen. OMB's original LoSo home features a state-of-the-art brewery, full-service Brauhaus, and a one-acre biergarten known across North Carolina for its events and festivals. In 2024 we opened our second location in the heart of Ballantyne — a two-story, 14,000-square-foot restaurant and biergarten — and it's quickly become a favorite gathering spot in south Charlotte. Our beer is proudly distributed statewide. Your role As a member of the Culinary Management Team, you'll lead the line and work closely with both the kitchen and service crews.
That means:
Making sure every OMB dish goes out with quality, care, and craftsmanship Holding the line on recipes, portion control, and presentation standards Hitting 12-minute ticket times without cutting corners Running quality checks on ingredients and finished plates Monitoring inventory and managing temperature logs and regulations Keeping a clean, safe, hazard-free kitchen that meets every health department guideline Modeling proper cooking techniques and knife skills for the team Training and mentoring cooks, and building a positive, collaborative kitchen Staying cool and adaptable when priorities shift and the rush hits Taking on additional duties as needed from the Corporate Executive Chef What's in it for you $20-24/hr base pay depending on experience Free beer stipend for OMB staff Medical, dental, and vision (full-time employees) 401(k) with company match Employee discounts on food, beer, and merch Family dinner with the crew Real room for growth What you bring A culinary degree or training in a high-volume kitchen Previous line cook experience Strong leadership and communication skills Solid professional cooking and knife handling skills Knowledge of safety, sanitation, and food handling procedures A strong sense of urgency and the ability to stay calm under pressure An open mind and a genuine can-do attitude Ability to transport up to 50 lbs A commitment to OMB's six core values Our core values Dedication to quality, no shortcuts.
