Position Lead Sushi Cook Description AREA15 is an immersive entertainment and retail destination that blends art, music, and retail in a dynamic environment. As a Lead Sushi Cook, you'll play a vital role in the Kaia experience by delivering an exceptional dining experience while serving as a shift leader and culinary role model for the Sushi Cook team. You will prepare and cook a variety of Asian-inspired dishes in front of guests while interacting with them, sharing stories or information about each dish as you serve it. In addition to contributing to all aspects of sushi production and food preparation, you will assist with daily kitchen operations, training team members, maintaining quality standards, and supporting management in ensuring an efficient and immersive dining experience. We're looking for someone with advanced sushi experience who thrives in providing top-tier service, mentoring others, and delivering extraordinary guest experiences. Your main responsibilities will include delighting guests, preparing sushi items in a guest-facing role, ensuring compliance with sanitation and food standards set by SNHD, and providing leadership and guidance to the culinary team during service.
RESPONSIBILITIES AND DUTIES
Perform all duties and responsibilities of the Sushi Cook position. Be the lead team member during assigned shifts, providing direction, support and guidance to Sushi Cooks and kitchen staff. Assist management with onboarding and training new team members on recipes, food preparation techniques, sanitation standards, and guest engagement expectations. Support shift execution by assisting with station assignments, production flow, and maintaining ticket times during peak periods. Serve as a point of contact for team members during service and escalate operational concerns to management when necessary. Conduct line checks to ensure food quality, freshness, and proper storage procedures are maintained. Assist with inventory counts, ordering recommendations, and monitoring product levels to minimize waste and shortages. Ensure all team members follow SNHD food safety regulations, sanitation standards, and Standard Operating Procedures (SOPs). Lead by example in guest interactions, demonstrating exceptional hospitality and immersive storytelling. Monitor food quality, presentation, portioning, and consistency to ensure all menu items meet AREA15 and Kaia standards. Engage with guests in an upbeat, approachable, and professional manner while preparing sushi and other Asian dishes on an open line. Prepare a variety of menu items, including sushi, stir-fried noodles, rice dishes, soups, grilled proteins and tempura, following approved recipes and standards. Properly handle and cook proteins such as beef, chicken, pork, and seafood, ensuring correct cooking temperatures and quality. Ensure the correct use of woks, grills, fryers, and other kitchen equipment. Provide a welcoming and energetic presence that enhances the overall dining atmosphere. Welcome guests with a verbal greeting as they enter and exit the restaurant. Support a culture of hospitality by ensuring interactions reflect friendliness, attentiveness, and care for the guest experience. Answer guest questions about menu item, offer information about ingredients and preparation techniques with enthusiasm and accuracy. Proactively interact with guests to create memorable experiences, creating a fun and lively environment. Contribute to maintaining an energetic, guest-centric dining room atmosphere in collaboration with service staff. Tell a story or provide information about each dish as it's being served to the guest. Prepare all sushi menu items according to approved recipes in a timely manner. Demonstrate excellent time-management skills in food preparation and guest service. Work collaboratively with the team to ensure efficient and accurate service, adhering to the restaurant's standards for food preparation, temperatures, ticket times, and flavor profiles. Dispose of any leftover items properly. Suggest menu items or combinations to enhance the dining experience for guests. Inventory and properly store all fish, seafood, perishable, and non-perishable ingredients. Properly handle and cook proteins including but not limited to all seafood items while ensuring correct temperatures. Ensure the correct use of all kitchen equipment. Maintain a clean station, adhere to hygiene and sanitation standards at all times. Maintain compliance with food handling and sanitation standards. Maintain the correct temperature of all food products during handling. Monitor the quality of raw food products to meet standards. Arrive punctually for shifts and follow Standard Operating Procedures (SOPs) set by AREA15. Ensure equipment is maintained as outlined in safety and preventive maintenance programs. Demonstrate ART! (AREA15's service standards) in every guest interaction. Adhere to department and company policies and procedures. Maintain a professional, polished appearance in line with AREA15 standards. Work various shifts, including nights, weekends, and holidays. Perform other work-related duties as assigned. This is a Tipped position. QUALIFICATIONS & SKILLS
Applicants must be 21 years of age or older. Proof of eligibility to work in the United States. Comfortable working in a creative, entrepreneurial start-up environment, introducing new concepts and innovations. Minimum of 3 months experience as a sushi cook, interactive dining cook. Previous lead, trainer, supervisor, or kitchen leadership experience preferred. Demonstrated ability to mentor, train, and develop culinary team members. Strong leadership, communication, and conflict-resolution skills. Strong knife skills, including precision cutting for nigiri and sashimi. Proficiency in portioning rice, protein, and vegetables to ensure consistency Ability to execute proper maki (rolls) preparation with efficiency and presentation. Understanding of proper fish handling. Expertise in plating and presentation for sushi dishes Minimum 1 year of sushi experience in a high-volume sushi restaurant or a related setting. Strong ability to engage with guests in a friendly, professional and approachable manner. Ability to engage in storytelling or describing dishes to enhance the guest experience. Strong time-management skills with the ability to balance food preparation and guest interaction. Collaborative team player who can work closely with service staff to maintain a lively, guest-centric atmosphere. Possession of a valid SNHD Health Card. Proficient knowledge of SNHD guidelines and requirements. Ability to lift up to 50 lbs. unassisted. Able to stand, walk, bend, and lift for extended periods. Ability to work with a team, being a team player. Ability to understand, speak, read, and write the English language. Availability for varied shifts, including evenings, weekends, and holidays. Ability to work in low lighting and sensory-sensitive environments. Ability to work in an environment subject to varying levels of noise, crowds, flashing lights, and smoke.
