Job Summary Dietary workers perform a variety of duties relating to plating and assembly of patient trays. Sanitation of all areas and equipment, cleaning and sanitizing of all cooking utensils to include (but not limited to) pots, pans, serving utensils, steam kettles, refuse removal, dish washing, transportation and retrieval of food carts (Wakefield). Essential Functions Assures the timely plating of all foods by preparing tray line for the plating and serving of all food by setting up all cooked and prepared foods, dishes, trays, flatware, etc. at stations
  • The tray line starts and finishes on schedule. Breakfast
  • 6 trays per minute Lunch
  • 5 trays per minute Dinner
  • 5 trays per minute Patient receives an accurate and complete food tray.
  • 100% accuracy at all times. Assures that all equipment is clean and sanitary by cleaning all kitchen equipment (but not limited to) steam tables, refrigerators, warmers, food carts, mobile equipment, work tables, coffee machines, dish washer, pot washer, slicing machines, mixers, grinders, food carts, ovens, steamers, mobile equipment, freezers, blenders, can openers and microwaves.
  • 100% compliment to NYSDOH and JCAHO codes. Set up tray assembly for meal service to include (but not limited to) hot and cold food items, proper serving utensils, paper supplies and to restock as needed while tray line is in progress.
  • Tray line always starts and finishes on schedule. Removes rubbish as needed, to include (but not limited to) Kitchen, Hot and Cold Production Area, Ingredient Room, Storeroom, Pot washing Area, Tray Assembly Area and Cafeteria.
  • 100% compliment to NYSDOH and JCAHO codes. Operates the pot washing machine and cleans, sanitizes and stores all pots and pans.
  • Cooks and dietary aides always have the necessary working tools. Sweep and mop offices, empty garbage cans and change garbage can liners (where applicable).
  • 100% compliment to NYSDOH and JCAHO codes. Wraps and dates all food products.
  • Foods are utilized in a safe and timely manner. Provides and maintains a safe environment through preventative and interventional measures.
  • Adherence to MMC's Infection Control, Safety and Disaster Policies and Procedures. Maintains cleanliness of non-patient areas, refrigerators, freezers and rolling stock. Checks expiration dates on supplies.
  • 100% compliance to quality control checks. Maintains required standards set forth by the NYSDOH by maintaining sanitary and safety standards in the preparation and storage of all foods and maintains a clean work area.
  • 100% compliance to visual inspections by Supervisor who refers to a checklist and maintains code as mandated by NYSDOH. Prepares sandwiches, portions out canned fruits, desserts, salads and whatever food or beverage item deemed necessary by the Director or Manager.
  • Customer's needs are always met. Trains other employees in his/her area of responsibility
  • There is always competent coverage of this position when regular associate is not available. Removes soiled trays and outdated products from floor pantries (where applicable).
  • Floor pantries are always 100% compliant with NYSDOH and JCAHO regulations. Is responsible and accountable for own actions.
  • Always adheres to MMMC's

Actively participates, practices and promotes Montefiore Excellence for continuous quality improvement. Follows customer service guidelines of the department as well as any other Montefiore initiative.

  • Communicates observations of patient/customer status to professional.
  • Assists other staff members on team within scope of practice. Interacts with coworkers in a manner that promotes team building. Other duties assigned.
  • Reports on and off duty to Supervisors for the smooth running of the operation.
Qualifications High School Required Experience in Customer Service Preferred Knowledge and experience in food safety preferred. English proficiency (must be able to speak, read and write effectively) Knowledge of tray line conveyor belt, coffee machine, food carts, dish washing machine, pot washing machine pulper (where applicable) preferred.
