JOB DESCRIPTION
The purpose of this position is to prepare and provide food service to residents in a cost-effective, efficient manner to safely meet residents' needs in compliance with federal, state and local requirements.

PROFESSIONAL REQUIREMENTS
Must be able to read and communicate clearly in English. Must be able to read and follow menus. Skilled at organizing various duties. Must be flexible and able to handle change easily and professionally. Maintain a positive attitude. Communicate with residents, families and staff in a professional and tactful manner. Be a role model of professionalism and teamwork. Demonstrate good work and time management habits.
PHYSICAL REQUIREMENTS OF JOB
(with or without assistance): Walking, reaching, bending, lifting, grasping, pushing and pulling, fine hand coordination, ability to hear and respond to pages, ability to understand and follow written and oral instructions and directions; ability to communicate with residents, families, personnel, vendors and consultants; ability to distinguish smells, tastes, and temperatures; and ability to remain calm under stress.
RESPONSIBILITIES AM COOK RESPONSIBILITES
Responsible for cooking and serving breakfast and lunch meal. Check menu and start prepping items to cook. Check and document temperatures in freezer and refrigerators Cook breakfast and lunch items Food to be placed on steam table 30 minutes before service Check and document food temperatures of food. If out of range report to supervisor. Clean steam table and prep equipment. Store, date and label leftovers. Check menu and begin dessert preparation Gather items for lunch including substitute Place menu on the dining room board if applicable Check menu to identify times that need to be pulled to begin thawing. Clean work areas
PM COOK RESPONSIBILITIES
Check menu items needed for supper Pull items needed for supper meal according to recipe book Prepare deserts Organize super cards Food to be placed on steam table 30 minutes before service Check and document food temperatures of food. If out of range report to supervisor. Clean steam wells after meal Store, date and label leftovers Set up breakfast cards for next day Clean work area Remove trash and place in outside dumpster Assist dishwasher Prepare and take PM snacks to nurses station or designated area.
GENERAL RESPONSIBILITES
Prepare residents' diets in accordance with diet orders and daily menus. Assist the food service supervisor to determine the amount and type of food necessary to prepare the daily menus. Monitor use of food to eliminate waste. Follow posted menus for food preparation. Stock food in compliance with dietary policies and procedures. Handle and prepare food in a sanitary manner. Prepare food which is palatable and appetizing in appearance. Keep work area clean and sanitize work surfaces after food preparation. Follow written menus and recipes. Understand and be able to prepare therapeutic diets. Be responsible for avoiding food waste. Assume responsibility for meeting meal schedules. Be responsible for care of food service equipment. Work cooperatively with food service staff and other departments. Attend in-service training programs for food service employees. Come to work as scheduled and consistently demonstrate dependability and punctuality.
