Job Description

POSITION SUMMARY
The Cook III position is an entry-level culinary role designed for new culinarians, recent culinary school graduates, or individuals beginning a professional culinary career. This position is primarily responsible for salad production, cold preparation, basic food preparation, station organization, and learning Willow Brook Chophouse standards while developing the skills necessary to advance to Cook
II. PRIMARY RESPONSIBILITIES
Prepare salads, garnishes, dressings, and cold food items according to recipes and standards. Complete daily prep lists accurately and on time. Maintain organization and cleanliness of assigned work areas. Follow all recipes exactly as written. Assist with basic vegetable preparation, portioning, and product organization. Set up and break down stations properly. Ensure all mise en place is complete before service. Assist line cooks and supervisors during service as needed. Attend daily stand-up meetings and training sessions. Maintain a positive attitude and willingness to learn.
CULINARY DEVELOPMENT
Learn Willow Brook Chophouse recipes, procedures, and standards. Develop knife skills and product knowledge. Learn proper food handling and sanitation practices. Gain exposure to advanced culinary techniques used within the Chophouse. Observe and assist with dry aging, charcuterie, butchery, and fermentation programs when opportunities arise. Demonstrate readiness for advancement into a Cook II position.
SANITATION AND SAFETY
Follow all HACCP and food safety procedures. Maintain proper glove usage and food handling practices. Practice clean-as-you-go procedures throughout each shift. Ensure products are properly labeled, dated, and rotated. Maintain clean workstations, coolers, and storage areas. Report equipment or safety concerns immediately.
QUALIFICATIONS
Culinary school education or equivalent kitchen experience preferred. Strong desire to learn and develop professionally. Basic knife skills preferred. Ability to work in a fast-paced kitchen environment. Positive attitude and strong work ethic. Ability to work nights, weekends, holidays, and club events. Ability to stand for extended periods and lift up to 50 pounds.
