Job Summary:
This position maintains sanitation of dish room area and equipment in back of house having direct contact with food service. Perform thorough cleaning and sanitation of kitchen areas and equipment by breaking down and sanitizing ovens, stoves, and production equipment; remove rubbish and grease and dispose properly; deep cleans walls, coving, floors, drains, and other areas as assigned in both front and back of house.
Primary Duties & Responsibilities:
Carry dirty dishes from breakdown areas to the dishwashing areas. Maintain and o perate dishwashing equipment according to safety and sanitation procedures. Submit work order for necessary equipment repairs. Remove all bagged dirty linen and replace as necessary. Remove s all garbage , cardboard, broken glass, and grease from the kitchen areas and dispose s properly. Clean and sanitize trash cans, bus carts, dumpster area , work surfaces, hoods and hood filters, walls, ceilings, ledges, floors, floor drains, grates, and floor mats. Run clean dishes to front of the house if necessary. Maintain par levels of plate - ware, glassware, silverware, small - wares , and related items. Use specialized equipment and cleaning solutions to remove grease, oil, and other contaminants from surfaces. Report any issues or potential hazards to management and recommend appropriate repairs or replacements. Ensure compliance with local fire codes, health regulations, and safety standards. Provide recommendations for maintaining a clean and safe kitchen environment. Cleans and sanitizes kitchen equipment including but not limited to , buffalo chopper, vegetable prep machine, ovens, stoves, refrigerators, walk in coolers, walk in freezers, steam kettles, tilt skillets, bakery equipment, and rotisserie, floors and drains, blast chiller and alto shams. Sweep and mop floors nightly . Maintain paper towel and soap dispensers. Once a week, deck brush the floors to remove grime from grout. Air vents in Garde Manger room are to be cleaned nightly. Maintain a safe and clean work area. Abide by all health codes and regulations. Maintain records required by regulatory. Assist with maintaining and updating MSDS books as necessary. Stock chemicals in respective areas and maintain pars as necessary. Make sure Team Members have necessary utensils and items to operate within the kitchen. R un for products to and from the warehouse , as requested . Maintain a positive and professional approach with Team Members and guests. Maintain knowledge of all current and upcoming promotions and events at Odawa Casino Resort. Maintain neat and well - groomed appearance in accordance with dress code policies. Attend all meetings as required. Complete all required training satisfactorily. Always m aintain the highest level of confidentiality. Work at other properties as needed. Perform in assigned areas as dictated by business levels and directed by management. Perform all other duties as assigned within the scope of the position.

Minimum Qualifications:
Must read, write , and speak English fluently. Must have good communication skills and be able to comprehend simple instructions, short correspondence , and memos. Must have basic math skills. Must be able to meet physical requirements such as significant lifting up to seventy-five (75) pounds , standing for long periods of time, bending, reaching, stooping, pushing, and pulling. Must be flexible with shift and days off with the ability to work overtime, weekends, holidays and special events, etc., as needed . You may be required to pass a skills assessment test to determine if you meet the minimum qualifications of the position. Exposure to loud and continual noise levels and a smoke-filled environment. Must be able to obtain a gaming license in accordance with the regulations established by the LTBB Gaming Regulatory Commission and be able to serve in the position under any other applicable law .
