Position:

 To perform duties to maintain kitchen work areas and restaurant equipment and utensils in clean and orderly condition.

Essential Responsibilities:

1. Sweeps and mops floors once every hour or as needed (at least once a day/night). 2. Washes worktables, walls, refrigerators and meat blocks. 3. Separates and removes trash and garbage and places it in designated containers. 4. Steam-cleans or hoses-out garbage cans. 5. Sorts bottles and breaks disposable ones in bottle-crushing machine. 6. Washes pots, pans and trays by hand. 7. Scrapes food from dirty dishes and washes them by hand or places them in racks or on conveyor to dishwashing machine. 8. Polishes silver, using burnishing-machine tumbler, chemical dip, buffing wheel and hand cloth, if required. 9. Transfers supplies and equipment between storage and work areas by hand or by use of hand truck. 10. Sets up banquet tables, when required. 11. Washes and peels vegetables using knife or peeling machine, when required. 12. Runs glasses through dish machine twice. 13. Understands OSHA regulations. 14. When handling chemical, always wears safety glasses. 15. Puts away and rotates stock. 16. Puts away all clean utensils and stock in designated areas. 17. Maintain personal hygiene. 18. Communication between co-workers and management team required. 19. Reports to work for scheduled shift, on time and in uniform in accordance with company policy. 20. Knows and complies with all company policies and procedures pertaining to this position and its duties. 21. Takes the initiative to greet guests in a friendly and warm manner. 22. Performs other related duties as required.
