Job Description
Catsmo LLC, an Artisanal Smokehouse located in Wallkill, NY is seeking individuals with a strong work ethic to join our Smoking/Curing Team.
Job Summary:
The Curing/Smoking team is responsible for ensuring the quality, quantity, and size of fish cured and smoked. The team cleans all fillets, weighs the fillets, salts, rinses the fish, and moves desalted product into the smokers. The members of this team maintain high attention to detail and are expected to efficiently move salmon fillets through each step in the salting process. The appropriate candidate for this position possesses the following skills:- Ability to work in cold conditions for extended periods of time (38 degrees).
- Ability to lift 40+ pounds. Physical stamina

- Works productively and efficiently to complete all daily tasks in a timely manner.
- A self-starter: works well with minimal supervision.
- Detail oriented.
- Ability to work full time during holiday season. The month of December is Catsmo's busiest time of year, This is considered as a black period. No PTO approved unless a necessity. General responsibilities are as follows (but not limited to):
- Correctly identify different types of salmon (Chilean, Faroe, Scottish, Canadian), note lot numbers of product, quantities of product.
- Work with other team members in order to bath, clean, salt, rinse, and smoke salmon accordingly.
- Clean work area before, during, and after shift.
- Understand the responsibilities of other team members in order to step in and assist in the case of an absence.
- Attend and participate in food safety trainings.
- Strong attendance is necessary.
