Description
Stone Brewing World Bistro & Gardens - Escondido is seeking an experienced Banquet Cook (Line Cook II) to support our high-volume events, catering, and banquet operations. This is a great opportunity for a culinary professional with a passion for large-scale food production, precision execution, and elevated presentation.
In this role, you'll be responsible for preparing and executing banquet-style menus, including both hot and cold items, for a wide range of events—from plated dinners to buffet service. You'll work behind the scenes to ensure seamless event execution, consistent quality, and an exceptional guest experience.
What You'll Do
Prepare and cook a variety of menu items including meats, seafood, poultry, vegetables, sauces, and composed dishes
Execute batch cooking and high-volume food production for banquet and catered events
Prepare both hot and cold items, including garde manger-style dishes
Follow recipes and plating standards to ensure consistency, quality, and presentation
Execute mise en place for large-scale events, ensuring readiness for service
Assist in plate assembly, garnishing, and buffet presentation
Set up, maintain, and replenish buffet stations for optimal guest experience
Coordinate closely with front-of-house (FOH) and events teams to ensure smooth service timing
Maintain organization, labeling, storage, and food safety standards in a production kitchen environment
Requirements

4+ years of experience in a high-volume kitchen, with a focus on banquet, catering, or production cooking
Proven experience with large-scale event execution and batch cooking
Strong knowledge of garde manger, cold prep, and presentation techniques
Ability to manage timing, coordination, and multiple priorities in an event-driven environment
High attention to detail and consistency in plating and food quality
Ability to work collaboratively with culinary and events teams
Strong organizational skills and commitment to food safety and sanitation standards
