Job Description

About Us Hudson Bread is a growing wholesale / artisan bakery known for high-quality breads. We're looking for a strong, experienced leader to run our 2nd Shift production team.
  • Position Summary We are seeking a hands-on Bakery Production Manager
  • 2nd Shift to oversee all afternoon and evening production operations.
You will lead the team in executing daily production plans, maintaining top quality, and hitting output targets. This is a working manager role where you will actively participate in production while driving efficiency and team performance.
Training Period:
Training will commence on 1st Shift (6:00 AM
  • 2:30 PM) for the first month before transitioning to the regular 2nd shift schedule.
  • Key Responsibilities
  • Lead and execute 2nd shift production (mixing, shaping, baking, finishing, packaging, and cooling) to meet daily demand and freshness standards.
  • Manage, schedule, train, and develop 8-15 production staff on the 2nd shift.
  • Ensure consistent quality, portion control, and adherence to all recipes and SOPs.
  • Maintain strict food safety, sanitation, and HACCP standards during shift.
  • Monitor inventory usage, minimize waste, and control labor costs for the shift.
  • Collaborate with 1st shift leadership for smooth handoff and production continuity.
  • Drive continuous improvement in efficiency, output, and team performance.
  • Jump in on the floor as needed — lead by example during peak production periods.
  • What You'll Bring Required Qualifications
  • Minimum 3+ years of experience in the same position (Bakery Production Manager or equivalent) at an artisan bakery — candidates without prior experience in this exact role will not be considered.
  • Bilingual
  • English and Spanish required (ability to speak, read, and write fluently in both languages).
  • Proven success managing full bakery production operations, including team leadership, quality control, and cost management.
  • Strong knowledge of baking science, dough management, proofing, oven systems, and finishing techniques.
  • Current food safety certification (ServSafe, NJ Food Handler, or equivalent).
  • Ability to work 2nd shift hours including regular Sundays.
  • Physical stamina to lift 50+ lbs, stand for long periods, and work in a fast-paced, warm environment. Preferred
  • Experience in high-volume wholesale or artisan bakeries.
  • Familiarity with bakery management software and inventory systems.
  • Track record of improving shift efficiency and reducing waste.
