Assistant Distiller

Four Fights Distilling is Rochesters newest, fast-growing craft distillery focused on producing high-quality, small-batch spirits. This is a hands-on role with the opportunity to grow into a Lead Distiller / Head Distiller position as the company scales. Position Overview We are seeking a motivated Assistant Distiller to support all aspects of production — from mashing and fermentation to distillation, bottling, and quality control. This role is ideal for someone looking to build real-world distilling experience in a startup environment. Responsibilities Assist with daily distillation and fermentation operations Prepare mashes, manage fermentation, and monitor yeast health Assist with still operation, cleaning, and maintenanceSupport bottling, labeling, and packaging Maintain detailed production records and compliance logs (TTB & NYS) Assist with inventory management and raw material ordering Maintain cleanliness, sanitation, and safety standards Assist with recipe development and R&D Support tours, tastings, and events as needed Qualifications 1+ year experience in brewing, distilling, fermentation, or beverage production (preferred) Strong interest in craft spirits and fermentation science Mechanical aptitude and strong attention to detail Ability to lift 50 lbs and work in a production environmentWillingness to learn, adapt, and grow with a startup Self-motivated and reliable Compensation & Benefits $17- $20 per hour (based on experience) Growth path to Lead Distiller role Employee discounts Opportunity to help shape a new brand from the ground up
