WINEMAKER - SIX EIGHTY CELLARS
Six Eighty Cellars is a family owned and operated winery on Cayuga Lake that crafts unique, earthenware-aged wines from Certified Sustainable grapes in the Finger Lakes of New York. With minimal intervention and unconventional techniques, we invite you to taste the unexpected. In this role, responsibilities/requirements include:
Oversee all wine making staff; day-to-day cellar work including, but not limited to: Crush activities (sorting, pressing, crushing), Cellar work (racking, blending, filtrations, stabilization when needed)
Coordinate with other departments and schedule work accordingly (events, wholesale needs, marketing needs, etc.)
Oversee upkeep of Six Eighty Cellars (SEC) tasting room, cellar, and warehouse inventory and organization.
Partner with Ops manager in regard to inventory, packaging materials, etc.
Be sure crush operations are scheduled and running smoothly
Oversee and manage custom crush winemaking
Order all dry goods for crush and wine production. Partner with Buttonwood Grove Winery as needed.
Continually develop and improve upon winemaking strategies for both wineries.
Responsible for final sign off on wines before bottling
Partner with Buttonwood Grove winemaker and team to streamline resources, consult on blending trials, etc.
Conduct all blending, fining, sweetening, acid trials, etc.
Perform, oversee and analyze lab work
Manage and coordinate bottling days and bottling line
Responsible for the overall care and maintenance of bottling line; including sourcing parts and scheduling maintenance or repair.
Facilitate the training of those working bottling line in sterilization procedures.
Represent the winery both virtually and in-person to the trade/media/marketing events in a professional manner
Make certain that all winemaking operations are being carried out safely and efficiently while still maintaining and improving quality standards.
Work with vineyard team in planning new plantings as well as management decisions when required
Determine harvest time through lab results as well as flavor and condition of the grapes
Coordinate harvest planning with any purchased fruit
Establish best treatment of grapes based on the vintage
Ensure Innovint is up-to-date
Write work orders in Innovint for staff
Point person with DNT for pickups and deliveries
Point person with other vendors and supplies
Conduct weekly production meetings
Have a growth mindset
Continually train and guide as needed
Work with and provide tasting notes, label information and copy to necessary partners
Be able and willing to lift 40 lbs
fork lift certification preferred
Pay:
$24.00 - $28.00 per hour
