We are seeking a skilled and enthusiastic Brewer to join our production team. The Brewer will be responsible for executing all aspects of the brewing process, from raw material handling to fermentation and packaging, ensuring consistent quality and adherence to our recipes and standards. This hands-on role is perfect for someone with a passion for craft beer, attention to detail, and a desire to grow within a dynamic brewery. KEY RESPONSIBILITIES 1.
Wort Production & Hot Side Operations Execute daily brewing operations on both the 30 BBL production and 3 BBL pilot brewhouses according to established SOPs and recipes. Manage raw materials, including milling, mash profiles, lautering, boiling, hop additions, whirlpool processes, and wort chilling. Monitor, document, and maintain accurate brew log data (gravities, pH, temperatures, times, and raw material lot tracking). Ensure optimal brewhouse efficiency and extract yields while maintaining rigorous quality control standards. 2. Cellar Management & Fermentation Control Perform daily monitoring of actively fermenting beers, tracking gravity drops, temperature curves. Execute Clean-In-Place (CIP) and Sanitation-In-Place (SIP) procedures on fermenters, brite beer tanks, brew houses, and transfer lines. Safely manage and execute dry-hopping procedures according to recipe guidelines. Perform yeast harvesting. Execute transfers from fermentation vessels to brite tanks, ensuring minimal dissolved oxygen (DO) pickup and precise carbonation targeting. 3. Packaging Assistance Assist the packaging team as required during high-volume periods or scheduling needs. Operate off-packing stations on the canning line, ensuring proper case packing, tray forming, palletizing, and date-code verification. Assist with washing, sanitizing, filling, and staging kegs for inventory. 4. Warehousing & Logistics Support Assist with warehousing duties, including the organization of raw materials (grain, hops, yeast) and packaging materials. Help receive incoming shipments. Safely operate forklifts and pallet jacks to stage production items or organize finished goods in the cold storage warehouse. QUALIFICATIONS & REQUIREMENTS
Experience:
A minimum of 2 years of professional experience in hot-side wort production is strongly preferred. Experience with both large-scale production (20+ BBL) and small-batch pilot brewing is highly desirable. Education:
High School Diploma or equivalent required.
Formal brewing education or certification (e.g., IBD, Siebel, UC Davis) is a major plus. Technical Skill:
Deep understanding of the chemistry and biology behind fermentation, sanitation protocols, and brewery safety procedures. Physical Stamina:
Ability to frequently lift up to 55 lbs, maneuver 165 lbs, stand for extended periods (8-10 hours), and work comfortably in loud, wet, hot, and cold environments. Schedule Flexibility:
