SanKai - Ryuichi Nakano's Premier sushi bar in Downtown EdmondsSushi master Ryuichi Nakano casts a wide net at SanKai, drawing longtime fans and welcoming newcomers to his intimate new sushi restaurant in the heart of downtown Edmonds. A coveted seat at Nakano's sushi bar has been a home-away-from-home for Seattle sushi lovers for more than a quarter century. First, at I Love Sushi on South Lake Union where Nakano-San honed his craft for a decade and later at Kisaku, his own critically acclaimed Green Lake neighborhood restaurant, sold in 2018.SanKai (translation: mountain/sea) provides a fresh vision for Nakano. POSITION SUMMARY
Courteously greet and escort guests to tables and assist in seating, ensuring standards of service. Assist in preparing the restaurant for service and always maintaining the cleanliness of the dining room. Take reservations and maintain reservation book. Assist in monitoring guests needs. Bid farewell to all departing guests.
ESSENTIAL FUNCTIONS
Knowledge Base Maintain complete knowledge of restaurant, bar and bar layout, table/seat/station numbers, proper table set-ups, room capacity, hours of operation, price range and dress code. Maintain complete knowledge and comply with all departmental policies and service procedures. Be familiar with P.O.S. system. Be familiar with reservation system platform. Adhere to all Health Department, sanitation, and safety regulations as required by the restaurant. Daily Responsibilities Guide Servers, Assistant Servers and Bussers in table set-up needs to ensure optimum service to the guests. Inspect table set-ups; check for cleanliness, neatness, and agreement to departmental standards; relay deficiencies to respective personnel. Inspect the restaurant environment and entrance area, ensuring compliance with standards of cleanliness and order. Rectify any deficiencies; always maintain cleanliness.

Set up Host station with necessary supplies; always maintain cleanliness. Report shortages to Manager. Review the reservation book, pre-assign designated tables and follow up on all special requests. Check restrooms to ensure they are cleaned and supplied properly. Inspect condition and cleanliness of menus and wine lists; ensure designated amounts are available. Ensure that daily specials are inserted into each menu. Update menus and wine lists as changes occur. Complete all closing side duties as assigned. Attend all Restaurant staff meetings as scheduled. Report any damage, maintenance problems or safety hazards to the supervisor. Customer Service Smile Always promote positive guest relations. Adhere to break compliance policy. Take, record, and confirm restaurant reservations/cancellations as specified in departmental standards using the reservation system. Greet and acknowledge all arriving guests, however busy and whatever time of day. Escort guests to tables and assist in seating at tables; present menus and extend congenialities in accordance with department guidelines. Accommodate all requests for information courteously. Anticipate guests' needs, respond promptly, and acknowledge all guests, however busy and whatever time of day. Communicate issues and feedback to manager on duty. Handle guest complaints by following company procedures and ensuring guest satisfaction and inform the manager. Monitor guest reactions and confer frequently with service staff to ensure guest satisfaction.

Answer phone within 3 rings, using correct salutations and telephone etiquette.

Take, record and relay messages in accordance with standards.

Attend menu and wine tastings as scheduled. Maintain a positive, friendly, welcoming, and hospitable attitude always.

Required:
Ability to obtain a Washington State Food Handlers Certification.
ESSENTIAL PHYSICAL REQUIREMENTS
Work conditions in certain areas of the restaurant can be hot, cold, wet, slippery and/or noisy. Frequent walking (up to 12 hours), including climbing up and down stairs is required. Ability to sit, stand, walk, climb stairs, bend, lift, twist, kneel, crouch, crawl, pull, push, carry, grasp, reach and stoop as needed, sometimes for extended periods, and to occasionally lift and carry heavy items up to 50 pounds (may be aided). If office work is required, it involves remaining in a stationary position most of the time in front of a computer, using a keyboard, mouse and telephone. Regularly operate a computer and other office equipment. Occasionally move about the work site to access file cabinets, office equipment, etc. Exert up to 10lbs of force occasionally, and/or a negligible amount of force frequently or regularly move objects. Communicate and exchange information with colleagues, clients and other individuals in person and electronically. Availability required for extended and various work hours, including nights and weekends.
REQUIRED COMPETENCIES

Exercise good judgment with difficult guests. Think clearly and quickly, maintain concentration a make concise decision in high-pressure situations. Prioritize, organize, and follow up. Focus attention on details. Suggestively sell selected food and beverage items. Provide clear, pleasant telephone communication with proper grammar. Provide legible communication. Do basic arithmetic. Give clear, correct, and concise directions to guests over the phone.
