This position is focused on the daily prep that keeps sushi production moving efficiently during peak business hours. Mornings are high-volume and time-sensitive. You must be able to work quickly, stay organized, and follow instructions consistently. Core Responsibilities (Main Portion of the Job) 1) Sushi Rice Prep & Handling Prepare sushi rice according to our kitchen process (washing, cooking, seasoning, cooling, and holding) Portion rice as needed for service/prep Monitor rice quality and consistency (texture, temperature, seasoning levels) Keep rice station clean and properly stocked 2) Sauce Preparation Prepare house sauces according to recipes and portion requirements Label and date sauces correctly Organize sauces for easy access during service/prep Maintain cleanliness and prevent cross-contamination 3) Packing & Organization Pack prepared items accurately and neatly (to-go/production packing as assigned) Label and date items correctly Organize packed items for smooth workflow and quick retrieval Maintain a clean packing area and dispose of waste properly Additional Duties (As Time Allows) Depending on workflow and timing, you may also help with smaller tasks such as: Light ingredient prep and restocking (as directed) Cleaning and wiping stations, containers, and tools Basic organization tasks to keep the kitchen running efficiently Assisting other team members when prep is caught up Pace & Performance Expectations This is a fast-paced kitchen environment .

We need someone who can:

Work efficiently without needing constant supervision Move with urgency while maintaining accuracy and cleanliness Follow established processes consistently Stay calm and focused during busy prep windows Punctuality & Reliability (Non-Negotiable) You are expected to arrive by yourself at 7:00 AM sharp until 11:00AM. This role requires consistent attendance and on-time arrival every day. Mornings are busy, and late arrivals disrupt production. Requirements Comfortable standing for the shift and performing repetitive prep tasks Able to lift and carry typical kitchen items (rice containers, boxes, etc.) Strong attention to cleanliness, organization, and food safety Prior kitchen or sushi prep experience is a plus, but not required if you learn quickly and work hard
