  • Full-time, Apprenticeship Sushi Chef Development Program This position is designed for someone who wants more than just another kitchen job.
We are looking for an individual with a strong foundation in food preparation and knife skills who is interested in developing into a professional sushi chef over time. While previous sushi experience is not required, applicants should already possess basic kitchen competency and be comfortable working with knives in a fast-paced environment. Our goal is not simply to teach someone how to assemble rolls. We are looking for a candidate who is genuinely interested in learning the craft, discipline, and standards behind sushi preparation. The Opportunity Most sushi chefs do not begin their careers behind a sushi bar. They begin by mastering the fundamentals: Knife handling Ingredient preparation Organization and cleanliness Consistency and attention to detail Efficiency under pressure Successful candidates will begin by learning the foundations of American-style sushi production and kitchen operations. As skills and knowledge develop, training may expand into more advanced techniques, including fish handling, traditional preparation methods, nigiri production, and concepts rooted in Edomae sushi. This is a long-term growth opportunity for someone who enjoys continuous learning and takes pride in mastering a craft. What We're Looking For Previous restaurant or food preparation experience Strong knife skills are required Ability to produce consistent cuts and maintain quality standards Strong work ethic and attention to detail Willingness to accept coaching and feedback Interest in culinary development and long-term growth Reliable attendance and professionalism Responsibilities Daily ingredient preparation Vegetable and protein fabrication Maintaining prep levels and kitchen organization Learning sushi production standards Supporting service during busy periods Maintaining sanitation and food safety standards Participating in ongoing training and skill development What You Will Learn American-style sushi roll production Rice preparation and handling Ingredient pairing and flavor balance Fish handling and processing fundamentals Traditional sushi techniques Nigiri preparation Principles and philosophy of Edomae-style sushi We can teach sushi. What we are looking for is someone who already understands the basics of working in a kitchen, respects the importance of knife skills, and is excited by the idea of developing into a true sushi chef over time.
