Fish Trimmer Copper River Seafoods, Inc.
POSITION PURPOSE
Copper River Seafoods is seeking skilled and reliable Seafood Trimmers for our year-round operations at the Anchorage plant. This hands-on role focuses on the precise trimming, filleting, and preparation of premium wild-caught Alaska seafood, including salmon, black cod (sablefish), Pacific cod, and halibut. Trimmers play a critical role in maximizing product yield and ensuring the highest quality standards for our customers. This is a physically demanding production position in a fast-paced plant environment. Candidates must be hardworking, motivated, and comfortable working long hours during peak production period.
ESSENTIAL DUTIES AND RESPONSIBILITIES
Expertly trim, fillet, debone, skin, remove pin bones, bloodlines, defects, parasites, and excess material from salmon, black cod, Pacific cod, and halibut using sharp knives and hand tools while maintaining maximum yield and consistent product quality. Inspect raw fish for freshness, size, grade, and quality, sort and portion according to company and customer specifications. Work efficiently on the production line to meet daily targets for trimming, cleaning, sorting, and preparation. Assist with related tasks such as packing, grading, weighing, or rotating to other processing stations as needed. Maintain a clean and sanitary workstation in full compliance with food safety standards (HACCP, GMP, sanitation protocols). Follow all safety rules, including proper knife handling, use of PPE (rain gear, boots, gloves, aprons), and plant procedures. Collaborate closely with team members and supervisors to achieve production goals.
WORK SCHEDULE AND CONDITIONS
Shifts will vary depending on fish arrivals and production volume. Seafood Trimmers must be prepared to work 7 days a week and 12+ hours per day during busy periods. There may also be times with fewer or no hours. Prompt and regular attendance is required when scheduled.
PHYSICAL DEMANDS AND REQUIREMENTS
Ability to stand for 12+ hours per day and perform repetitive cutting and handling motions. Capable of lifting and moving objects up to 50 lbs repeatedly. Comfortable working in cold, wet conditions with constant use of hands and knives. Strong knife skills, hand-eye coordination, attention to detail, and a focus on quality and efficiency. Reliable, team-oriented, and able to thrive in a fast-paced setting. No experience required (training provided), but previous seafood trimming, filleting, or processing experience (especially with salmon, cod, or halibut) is preferred and reflected in pay.
