Job Description

Position Summary The Ready to Cook (RTC) Supervisor is responsible for supervising the daily operations of the RTC poultry processing department, ensuring production efficiency, product quality, food safety compliance, and adherence to company operational standards. This position is focused on overseeing Ready-To-Cook processing operations including marinating, breading, par fry cooking, freezing, packaging, and shipment preparation. The RTC Supervisor is expected to lead production personnel, maintain operational flow, minimize downtime, monitor yields and throughput, and ensure compliance with USDA, OSHA, HACCP, SOPs, and the Company's Food Safety Plan. Key Responsibilities
  • Oversee and coordinate RTC production operations to ensure efficient processing while maintaining product quality, food safety, and production targets.
  • Supervise Ready-To-Cook production processes including marination, seasoning, breading, frying/par fry cooking, freezing, packaging, and boxing operations.
  • Monitor production throughput, labor efficiency, downtime, yields, and line performance metrics.
  • Supervise and enforce compliance with USDA, OSHA, HACCP, GMPs, SOPs, Food Safety Plan, and company safety protocols and procedures.
  • Lead, train, schedule, and manage RTC production employees to achieve operational and production objectives.
  • Monitor product quality standards, cooking specifications, breading consistency, temperatures, and packaging integrity.
  • Coordinate with Quality Assurance to ensure food safety compliance and successful regulatory inspections.
  • Collaborate with Maintenance to minimize equipment downtime and ensure proper operation of fryers, freezers, conveyors, breaders, scales, and packaging equipment.
  • Track production schedules and adjust staffing and workflows based on operational demands and customer requirements.
  • Identify operational inefficiencies and implement continuous improvement initiatives focused on productivity, waste reduction, labor optimization, and product consistency.
  • Maintain accurate production documentation, downtime records, yield reports, inventory usage, and performance KPI reports.
  • Coordinate with Shipping, Plant, and Logistics departments to support product flow and shipment schedules.
  • Ensure proper sanitation practices and support pre-operational and operational inspections.
  • Promote a professional, safe, and team-oriented work environment throughout the RTC department. Qualifications/Education
  • High school diploma or equivalent required.
  • Associate or bachelor's degree in Food Science, Operations Management, Industrial Management, or related field is highly preferred but not required. Experience
  • Minimum 2-4 years of supervisory experience in poultry processing, RTC operations, food manufacturing, or similar production environment.
  • Experience supervising par fry, breading, marination, freezing, or cooked poultry operations strongly preferred. Knowledge, Skills & Abilities
  • Strong leadership and team management skills.
  • Knowledge of RTC poultry processing systems and production flow.
  • Understanding of USDA, OSHA, HACCP, GMPs, SOPs, and Food Safety Plan requirements.
  • Ability to troubleshoot production and operational issues while implementing corrective actions.
  • Strong organizational, communication, and problem-solving skills.
  • Ability to manage labor efficiency, schedules, and production priorities in a fast-paced environment.
  • Experience using production reporting systems and Microsoft Office Suite.
  • Strong focus on continuous improvement, operational efficiency, and food safety culture. Physical & Work Environment
  • Ability to work in cool, damp, wet, refrigerated, and production plant conditions (approximately 40°F +/-).
  • Ability to stand, walk, bend, twist, reach, and move throughout the production facility for extended periods.
  • Ability to work around production machinery, fryers, conveyors, freezers, and packaging equipment.
  • Ability to operate or oversee Powered Industrial Trucks (PIT) and related warehouse equipment as required.
  • Ability to occasionally lift or move materials consistent with production operations.
