Fish Cutter / Portioning Specialist (Part-Time)

On The Hook Fish and Chips About the Role We're looking for a reliable, detail-oriented Fish Cutter / Portioning Specialist to help prepare high-quality fish for our busy food truck operation. This position focuses on cutting fish fillets into consistent portions and cutlets that meet our serving standards. This is a hands-on food preparation role ideal for someone with kitchen, seafood processing, butcher, or food production experience. Responsibilities Portion fish fillets into uniform cutlets according to company specifications Maintain product quality, consistency, and appearance Follow food safety, sanitation, and handling procedures Weigh and package portions as needed Keep workstations clean and organized Assist with inventory tracking and minimizing waste Follow all health department and food safety requirements Qualifications Experience with knife work, seafood processing, butchering, or commercial food preparation preferred Ability to work efficiently while maintaining accuracy Strong attention to detail and consistency Ability to stand for extended periods and lift up to 50 pounds Dependable attendance and punctuality Food Handler Permit preferred (or willingness to obtain one) What We Offer Consistent part-time schedule (approximately 20 hours weekly) Flexible scheduling options Small team environment Opportunity for additional hours during busy seasons Employee meal discounts Ideal Candidate You take pride in producing a consistent product, work well independently, and understand that precise portioning directly impacts food quality, customer satisfaction, and food costs.
