About Haute Feast at Barnegat Oyster Collective Haute Feast at Barnegat Oyster Collective is a waterfront, chef-driven, farm-to-table dining experience located at the headquarters of a working oyster farm on Barnegat Bay in Barnegat, NJ. Our menus change weekly, driven entirely by what our local farmers and fishermen are harvesting. Every dish is sourced with intention, and every ingredient has a story. We operate Memorial Day weekend through end of September. We move fast, hold ourselves to a high standard, and take genuine pride in the experience we create for our guests. We're looking for people who feel the same way. The Role The raw bar is where the oyster story becomes a plate. As a Raw Bar Shucker at Haute Feast, you are responsible for shucking and plating all raw bar orders to exact presentation standards with speed, precision, and pride. Every oyster that leaves this station must be shucked cleanly, presented beautifully, and handled with care from pull to plate. This is a production role that demands true shucking skill. A mutilated oyster does not leave this station. Shifts are available Thursday through Monday, including holidays, Memorial Day weekend through end of September. During peak service, two to three shuckers work the station simultaneously. What You'll Do Power wash all oysters before service — every oyster presented must be pristine Stock the station with coolers filled with ice before service Pull oysters from the walk-in refrigerator and log all pulls on the clipboard tracking sheet — type, bag count, and date pulled Shuck oysters cleanly and precisely — no shell debris, no torn meat, no dry shells Build and plate all raw bar orders to exact presentation standards Place oyster designation markers correctly on all platters Track and record all dead or dry oysters opened during service Handle all oyster harvest tags per regulatory protocol Prepare and plate clams, shrimp cocktail, and crab claws as directed Assist with fresh fish sales from the fish case Monitor oyster supply throughout service and communicate restocking needs proactively Run platters to tables when called upon Maintain station cleanliness and food safety standards throughout service Break down and clean the station fully after service What We're Looking For 1+ year experience shucking oysters in a restaurant, seafood market, or catering setting preferred Quick hands, sharp focus, and comfort with high-volume service Genuine commitment to cleanliness, food safety, and presentation standards Good communication skills and ability to work as part of a team Appreciation for sustainable seafood and interest in learning about local aquaculture Availability Monday through Sunday, including holidays, Memorial Day weekend through end of September Compensation Competitive hourly rate + tip pool share • Rate increases based on experience and performance What You'll Gain Deep knowledge of New Jersey oyster farming, aquaculture, and local seafood sourcing Experience at one of the most respected oyster operations on the Jersey Shore A waterfront setting with a passionate, tight-knit team The foundation to grow within the Haute Feast brand
