JOB SUMMARY
Under the general guidance of the Restaurant Director, the PM Restaurant Manager oversees the evening operations of Essensia Restaurant + Bar and In Room Dining. This role is responsible for developing and upholding 4 star service standards, supervising staff, driving revenue performance, and ensuring operational efficiency. The PM Restaurant Manager delivers exceptional guest satisfaction through consistent service quality, effective staff training, and strong communication with the kitchen and supporting departments. Responsibilities include recruiting and onboarding, scheduling, inventory and cost controls, and ensuring full compliance with all health and safety regulations, while fostering a positive, team oriented culture that reflects the brand's values and service philosophy.
MAIN DUTIES & RESPONSIBILITIES
Lead the PM operations of Essensia Restaurant + Bar, ensuring exceptional guest experiences, operational excellence, and consistent support of all front of house functions. Review and uphold established service standards, brand expectations, policies, and operating procedures to ensure consistency, quality, and compliance across all areas of responsibility. Facilitate and lead daily pre-shift meetings, providing service-focused direction, operational updates, guest experience initiatives, menu knowledge training, and team engagement opportunities. Manage and oversee guest arrival and seating operations, ensuring efficient guest flow, optimal table management, and a warm, personalized welcome experience. Manage and oversee the Essensia Bar and Lounge operation, including nightly happy hour activations, brand sponsorships, musical entertainment and other marketing events. Ensure successful execution of group dinners, romantic private dining set-ups and Chef collaboration dinners. Proactively address guest concerns, service challenges, and recovery opportunities with professionalism, urgency, and a commitment to exceeding guest expectations. Partner closely with Culinary, Stewarding, Banquets, Front Office, and other departments to ensure seamless communication, coordination, and execution of daily operations and special events. Monitor dining room performance throughout service periods, ensuring adherence to service standards, proper staffing levels, and timely completion of all operational tasks. Verify the completion and quality of all side work, opening procedures, and closing duties performed by servers, bussers, hosts, and support staff. Ensure compliance with all local, state, and federal health, safety, sanitation, alcohol service, and food handling regulations, maintaining the highest standards of cleanliness and workplace safety. Recruit, train, coach, mentor, and develop team members through continuous feedback, performance management, and recognition programs that promote employee engagement and retention. Complete and oversee all daily administrative responsibilities, including tip distribution review, financial reconciliations, operational reporting, guest feedback analysis, and management recaps. Review guest satisfaction surveys, online reviews, and internal feedback channels, implementing corrective actions and service improvement initiatives as needed. Manage departmental inventories and supply levels, including ordering, receiving, storage, and inventory controls through approved systems to minimize waste and control costs. Prepare, publish, and manage weekly schedules based on business demands, productivity goals, and labor budgets while reviewing and approving payroll and timecard records through Paycom. Coordinate the preparation, maintenance, and distribution of current menus, promotional materials, wine lists, and other guest-facing collateral. Support and oversee the operations of In-Room Dining (Room Service), ensuring service consistency, inventory accuracy, revenue optimization, and adherence to established standards. Perform additional duties, special projects, and leadership responsibilities as assigned.
OTHER DUTIES & RESPONSIBILITIES
Maintain the highest level of customer service and guest satisfaction according to the standards set forth by The Palms Hotel & Spa. Ensure compliance with health and sanitation policies in all areas. Adhere to all fire, safety, and security procedures according to hotel policy. Adhere to all sustainability guidelines as per the Inspired by Nature Program.
QUALIFICATIONS
Knowledge, Skills, and Abilities Required:
3+ years of upscale restaurant and bar experience, at least partly in a management role Knowledge of 4 star restaurant and bar standards; ability to train staff and uphold high service standards Excellent customer service skills; ability to lead team to create a professional and memorable guest experience Fluent in English with excellent communication skills, a second language is an asset Strong operational focus and attention to detail Ability to work effectively in a multi-cultural team environment, showing genuine care for all Team Members and guest(s) Maintain a professional appearance and manner at all times Computer and technology proficiency in POS management, booking platform and staffing and payroll systems. Education/Certifications High school diploma required, higher education in Hospitality or related field preferred Health and alcohol safety certifications (e.g. Food Handler, Responsible Vendor) Wine knowledge or sommelier training is a plus
