The Role As General Manager, you own the full operation — from the guest experience to the P&L. You're the local face of the Campero brand, responsible for building a high-performing team, running an efficient and profitable restaurant, and making sure every guest leaves happy. What You'll Do Set goals and oversee daily operations across front- and back-of-house Own the restaurant's P&L — managing food cost, labor cost, and profitability against budget Review financial reports regularly and take corrective action to keep the restaurant healthy Recruit, hire, onboard, and train your team to maintain a strong, complete staff Coach and develop employees, providing regular feedback and ensuring compliance with company policy Maintain food quality, safety, and sanitation standards throughout the restaurant Resolve operational issues as they come up and identify ways to improve efficiency Build guest loyalty by modeling a passion for service and addressing feedback directly Manage vendor orders and ensure accurate daily cash-outs Implement best practices to keep the restaurant running smoothly What You'll Need High school diploma or equivalent required; Associate's or Bachelor's degree in Business, Hospitality Management, or related field preferred 1+ years of management experience in the QSR industry, with direct P&L responsibility Proven track record of managing restaurant financials and controlling food/labor costs Strong leadership skills, with experience coaching and developing a team A genuine commitment to guest satisfaction and a customer-first culture Fluent in English and Spanish (required) Food Handler's Card / ServSafe Certification (preferred) Comfortable using basic computer systems Able to lift/push up to 50 lbs. and stand for extended periods Reliable transportation and a valid driver's license Open availability, including nights, weekends, and holidays Willingness to occasionally support other locations as needed Why Pollo Campero Real ownership — run your own restaurant and your own P&L Real growth opportunities — most of our leaders started as Crew Members Competitive pay and benefits, including medical, dental, and vision Paid time off and flexible scheduling A fast-paced, energetic team environment Ready to lead a team and add some flavor to your career?
