About La Nouvelle La Nouvelle is an intimate French Nouveau restaurant focused on exceptional hospitality, thoughtful cuisine, and a wine program rooted in the great regions of France. We believe memorable dining experiences are created through genuine hospitality, attention to detail, and a team that takes pride in every guest interaction. We are seeking a hands-on, entrepreneurial Restaurant Manager who operates with an owner's mentality and is passionate about building a successful business - not simply managing shifts. Position Summary This is not a traditional floor manger role. We are looking for a leader who understands that every detail impacts the guest experience and the bottom line. The ideal candidate will drive service standards, develop staff, build guest relationships, support revenue growth, manage costs, and work alongside Chef Matt Landillon to ensure La Nouvelle continues to be one of the premier dining destinations in St. Augustine. What You'll Do Lead all front-of-house operations with a relentless focus on hospitality and guest satisfaction. Drive sales, guest counts, repeat business, and overall resturant profitability. Maintain and elevate service standards consistent with upscale and fine dining expectations. Develop, coach, and hold accountable a high-performing hospitality team. Build relationships with local guests, hotel partners, and community stakeholders. Oversee reservations, guest communications and special events. Collaborate with Chef Matt Landillon to ensure seamless FOH/BOH execution. Monitor labor, purchasing, inventory, and operational costs. Analyze financial performance and identify opportunities for growth and improvement. Maintain wine service standards and actively participate in wine sales and staff education. Be present on the floor, lead by example, and set the tone for the entire operation. Qualifications Minimum 3-5 years of management experience in upscale dining or fine dining resturants. Strong knowledge of wine, with particular emphasis on French wine regions, producers, varietals, and service standards. Demonstrated ability to lead teams, drive sales, and improve financial performance. Experience managing labor costs, inventory, scheduling, and restaurant P&Ls. Exceptional guest relations and conflict resolution skills. Strong organizational and communication abilities. Ability to work evenings, weekends, and holidays as business demands require. Sommelier certification is a plus but not required. What We're Looking For The ideal candidate: Thinks like an owner. Takes responsibility for results. Leads from the front. Is equally comfortable discussing Burgundy and Bordeaux as they are reviewing labor reports and sales strategies. Wants to help build something special. Compensation & Benefits Competitive salary based on experience. Health insurance eligibility after 90 days of employment, with the company contributing 50% of the employee premium. Dining benefits.
