Job Description:
Command of the
Line:
You will oversee the daily execution of the kitchen, managing ticket times, prep schedules, and the high-volume production of our signature grab-and-go meal prep line.
Systems Architect:
You don't just cook; you manage the process. You will refine BOH systems for labeling, rotation (FIFO), and equipment maintenance to ensure the kitchen runs with military precision.
The Gold Standard:
You are the final eyes on every plate and meal-prep container. You ensure total recipe adherence, exact portioning, and "picture-perfect" presentation every time.
Sanitation & Safety:
You set the bar for cleanliness. You will maintain an immaculate, health-code-ready kitchen 24/7 through rigorous organizational standards and a "clean-as-you-go" culture.
Responsibilities:
Production Management:
Lead the "prep-to-plate" workflow, ensuring the retail meal-prep fridge is stocked, fresh, and meets daily par levels.
Inventory & COGS:
Take full ownership of ordering, waste tracking, and inventory control. You'll manage food costs without sacrificing the premium quality our members expect.
Team Leadership:
Recruit, train, and hold BOH staff accountable. You foster a culture of professionalism where reliability and "getting it right the first time" are non-negotiable.
Quality Control:
Conduct daily line checks and taste tests. If a sauce isn't right or a protein is overcooked, it doesn't leave the kitchen.
Requirements:
Experience :
Minimum 2-3 years of Kitchen Management or Lead Line Cook experience in a high-volume, professional environment.
Mindset:
A strong sense of accountability and a desire to lead by example.
Skills:
Deep knowledge of food safety (ServSafe Manager certification required) and a strong grasp of kitchen financials (COGS, labor percentages, and yield).
