Bakery Manager Responsibilities:
Oversee Night Operations & Production:
Lead overnight baking, finishing, packaging, and dispatch workflows across multiple production lines to ensure product quality and consistency.
Manage Labor & Schedules:
Coordinate staffing, scheduling, and labor forecasting while maintaining facility equipment and managing logistics.
Drive Process Improvement:
Develop and implement Standard Operating Procedures (SOPs) focused on increasing yield, reducing waste, and optimizing process efficiency.
Enforce Compliance & Safety:
Maintain strict sanitation standards and ensure full readiness for audits in compliance with OSHA, FDA, GMP, and HACCP regulations.
Overnight Bakery Manager Requirements:
Industry Experience:
Minimum of 7+ years of experience in high-volume food production or manufacturing, including at least 3+ years in a leadership role.
Operational Expertise:
Proven success managing large-scale, multi-line operations with complex workflows, production planning, and labor management systems.
Team Leadership:
Preferred experience leading, coaching, and developing large teams of more than 40 employees.
Physical & Logistics Capabilities:
Ability to stand for up to 10 hours, lift up to 50 lbs, work overnight shifts (including weekends/holidays), and hold a valid driver's license to operate company vehicles.
