POSITION SUMMARY
The Manager - Restaurant & Bar holds full operational and financial accountability for Hopunion Gastropub, including the kitchen, dining room, and bar program. This individual leads the daily operation to deliver a consistent, high-quality guest experience while meeting revenue, profitability, and brand-standard objectives. The role serves a mixed demand base of hotel guests, airport travelers, and local patrons, and requires a hands-on leader capable of balancing front-of-house hospitality with disciplined back-of-house and beverage cost control.
THIS IS AN HOURLY + REVENUE SHARE POSITION. KEY RESPONSIBILITIES
Operations Direct all daily front- and back-of-house operations to ensure seamless service, cleanliness, and adherence to brand and property standards. Oversee the bar and craft beverage program, including draft and rotating selections, cocktail menu, inventory rotation, and supplier relationships consistent with the gastropub concept. Maintain compliance with all federal, state, and local regulations, including Michigan Liquor Control Commission requirements, health department codes, and responsible alcohol service practices. Partner with the culinary team on menu execution, plate presentation, food quality, and periodic menu engineering. Financial Own the outlet P&L, including revenue generation, cost of goods sold (food and beverage), labor cost, and controllable expenses. Develop and manage budgets and forecasts; analyze variances and implement corrective action to protect margins. Establish and enforce inventory, purchasing, receiving, and par-level controls to minimize waste and shrinkage. Guest Experience Drive guest satisfaction through consistent service standards, prompt issue resolution, and a welcoming atmosphere. Monitor guest feedback channels and online reputation, responding appropriately and using insights to improve the operation. Team Leadership Recruit, hire, train, schedule, and develop a high-performing service and bar team. Conduct performance management, coaching, and progressive discipline in coordination with hotel leadership and Human Resources. Manage labor scheduling to align staffing with forecasted business volume and service-level expectations. Sales & Marketing Collaborate with hotel leadership on local marketing, promotions, and outlet positioning to grow covers and average check. Identify opportunities to capture in-house guest capture rate, group and meeting business, and local repeat patronage.
QUALIFICATIONS
Minimum 3-5 years of progressive restaurant and/or bar management experience, with at least 2 years in a Manager or comparable leadership role preferred. Demonstrated P&L ownership and proven results in cost control and revenue growth. Strong knowledge of beverage operations, including craft beer, draft systems, and bar program management. Working proficiency with POS systems, with Toast experience preferred. Strong history of managing inventory controls and monitoring food and beverage costs. ServSafe Manager certification and TIPS (or state-equivalent) responsible alcohol service certification required, or ability to obtain within 90 days of hire. Excellent leadership, communication, and guest-relations skills. Hotel or branded restaurant experience preferred.
PHYSICAL REQUIREMENTS & SCHEDULE
Ability to stand and walk for extended periods, lift up to 50 lbs., and work in a fast-paced environment. Availability to work a flexible schedule including evenings, weekends, and holidays based on business demand.
